How Do You Change Color/Yarn When Knitting???

I need this in simple terms please....HOW do you change colors?? I need to make stripes and have no clue...sites say to just ADD the new color, but what do you do with the old??? Do you CUT it?? If not, how do you work that yarn waaay beyond where you stopped using it, to use it again?? I'm so lost! I really want to CUT it and tie the new yarn on, but I know that's a no no. So if I'm to merely ADD new yarn on, how does the original yarn not unravel and then how do you get it up several rows to use it again?? TIA! (Making a hat, btw, on the Knifty Knitter)

Halfway down this page shows several different ways to join on different colors of yarn. I love this site for all my knitting questions. If you need more help with a particular technique, let me know.:)

I just tie on a new thread and knit away. If you leave a little tail, you can weave it into the work, and it doesn't show. I made two scarves with stripes one year!

I cut and tie and continue on. My grandma who was a knit and crochet queen showed me that and it works every time.
