I am trying to do some meal planning (GASP!) and I need some ideas for chicken, specifically breasts. Anything you got, I'll be thankful for. I just want something different, something my son will like. He's a typical kid - a bit picky. I'm thinking something along the lines of a pasta dish with chicken breasts, or maybe a good way to grill chicken breasts so that they don't dry out. No one in my family is too keen on rice, but I like it.

What ever you ladies come up with! :)

One of our kids favorites.
Chicken tenders with mango sauce:
Ingredients
4 fresh boneless, skinless chicken breasts *We use chicken tenders*
1 teaspoon curry powder
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon cayenne red pepper
1/4 teaspoon ground black pepper
1 recipe Dipping Sauce:
1/2 cup water
1/2 cup sugar
1 mango peeled* and chopped
1/2 cup white wine vinegar *We use white wine*


Directions Preheat oven to 350°F.

Slice chicken breasts into strips; set aside.

In a plastic bag, combine curry powder, cumin, ginger, cayenne pepper and black pepper. Shake to mix. Place chicken in bag and shake well to coat. Remove chicken from bag and place on a foil-lined baking sheet. Place in oven and bake for 10 to 12 minutes, or until chicken is no longer pink inside (see cooking tip).
Note: We grill them instead

To make mango dipping sauce: Stir water and sugar together in a small skillet. Heat over low heat until sugar dissolves. Add mango and increase heat to medium-high. Slowly bring mixture to a boil. Remove from heat; let cool to room temperature. In a blender, combine mango mixture and vinegar and blend until smooth.
Note: We use the food processor and prefer to leave it chunky not smooth. John thinks it tastes like fresh applesauce.

Serve chicken pieces with sauce for dipping.

*To Peel a Mango: Stand the mango on end and slice down along the sides of the large flat pit with a boning knife or other long, flexible knife, curving around the pit as you slice. You will end up with three sections: two larger, rounded sections and a flat center section. Score the fruit in each rounded section lengthwise into slices, then crosswise into chunks, if desired. Holding a rounded section by its edges, push at the curved bottom to turn the rind inside out. The slices or chunks can then be cut away from the rind. Trim away rind from the flat center section and separate as much fruit as possible from the pit. Always cut away from yourself and be careful - mango is very slippery.

Chicken cajun Chicken---my son's favorite.

Ingredients:
1 1/2 tablespoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon ground black pepper
1 teaspoon crushed red pepper
12 oz. boneless, skinless chicken breast (4 small breasts)
2 tablespoons minced peeled onion
1 clove garlic peeled and minced --*We use 1 tablespoon ready to use minced garlic*
2 cups chicken broth
1 tomato seeded and minced --*canned chopped tomato works great too*
1 tablespoon chopped fresh herbs (choose from oregano, basil, tarragon, or marjoram)
1/4 teaspoon salt
8 ounces penne pasta or any favorite pasta


Directions
To make spice:
Mix paprika, garlic powder, onion powder, and pepper(s). Set aside.

Place chicken breasts between two pieces of wax paper and pound with a meat mallet to flatten. Moisten breasts with water and rub with Cajun spice (reserve 1/4 teaspoon of the spice for the sauce). *We do the shake & bake method by adding spices in ziplock baggie. Simply add chicken and shake until well coated.*

Spray a very hot cast-iron pan with vegetable cooking spray. Fry breasts for 4 to 6 minutes, or until done. Remove from pan and slice into thin strips; set aside.
*Note: We grill ours instead.*

Meanwhile, cook pasta according to package directions; drain.

Sauté onion and garlic in a small saucepan sprayed with vegetable spray until onion is soft. Add broth, tomato, fresh herbs and reserved Cajun spice. Simmer for 8 minutes. Season with salt to taste.

Arrange pasta on a platter. Lay chicken on pasta and drizzle with sauce.

I remember watching the Food network one time with Rachel Ray & she dipped Chicken breasts in just plain parmasean cheese and coated it real good and then fried it in the pan. It came out really good with a cheesy crust. I've been meaning to try that.

I know what you mean about the rice thing, I'm the only one in my house that eats it. My mom used to make a chicken & rice dish that was just awesome.

Another easy one, we had this the other night. Pound flat and grill some boneless chicken breasts - this can be done beforehand, we cook a whole bunch on Sundays and then use them in various recipes throughout the week. Get some good, fresh tortellini, cook per package instructions and drain, saute some peppers, chop or slice the chicken up, throw everything in a pan with some sundried tomato pesto and heat it all up. It's really quick, and delicious.

I made some boneless chicken yesterday with canned nacho cheese and cream of chicken it is wonderful...all i did was used whatever chicken was in there put water in the pan first then the chicken cooked that for 40 minutes turning them over half way through...dumped the water out then put in the nacho cheese and cream of chicken for another 30 minutes and it was awesome the only problem i didn't have enough for us to be full lol ...

If it is boneless I put mine in a corningware dish and cover it with italian dressing cover the dish and microwave it for 15-20 minutes depending on how much or how big the chicken is and it is awesome plus very moist and never dry.

Lisa, email me at heidi henkel at hotmail dot com and I'll email you the BEST chicken recipe out there. AND...you probably have all the ingredients in your house already. I think there are about 5-6 ingredients too.
Neighbors ask for it by request when they have babies and I offer to cook food! :)

I make Caesar Chicken - I make noodles, and place them in a baking dish. I take Caesar Dressing, throw it in a ziploc bag with chicken pieces, shake really well to coat. If you want, you can then take the coated chicken and throw it in a bag of seasoned breadcrumbs. Lay the chicken pieces on top of the pasta, and bake (I don't think it takes much more than 30 minutes - just as long as the chicken is cooked.)

Here's one of my favorites,and it is soooo easy.I put about 4 breast ( preferably boneless,but doesn't matter)in a baking disk.I then pour a can of creme of mushroom,or creme of chicken,or for something a little different,a can of chicken noodle soup, all over the chicken.I add whatever spice I am in the mood for (salt,pepper,garlic,Mrs.Dash,lemmon pepper,etc)and put just a little bit of water for moisture.I cover it with tin foil,and bake it slowly for at least an hour so it will be very tender.It's delicious.

Tuscan Chicken

Dump all ingredients in pot and cook for 4-6 hours on low

1 Can Black Olives (pitted)
1 Jar Pepperoncinis
1 Can Chunky Tomatoes
1 large wedged Red Onion (opt)
4 B/S CK Breast

Serve over pasta or Rice

This is the Yummiest recipe and simple!
