What do you all have for Easter dinner? My mom and I are sitting here trying to think of what to have and we are both drawing a blank. So far we have: Ham and Salad...lol

We're having a ham, scalloped potatoes, broccoli casserole, green salad, a fruit platter and Crystal's yummy dip, and dinner rolls with lemon bars and the requisite bunny cake.

We are having spiral ham, mashed potatoes, rutabaga, brown sugared sweet potatoes, green beans, corn, peas, (everyone likes different veggies here, drives me nuts!) cole slaw, tossed salad and have to figure out dessert yet.

My DD loves Shania Twain.She wouldnt eat mashed potatoes for me, so I add sour cream/cream cheese and told her that there Shania Twains favorite and now there her favorite So now there called Shania Twain potatoes in my house. Whatever works eh!

We have ham, green beans, rolls, sweet potatoes, mac-n-cheese, corn, chocolate pie, veggies, hamrolls, pickles, stuffing and deviled eggs!!! Then we sleep and then we get up and start all over again.

I am going to have to not eat for 4 days to save my points to eat on Easter!!!

Well, my mom is sick of ham for Easter, so last year she made BBQ pork spare ribs. I don't know what's on the agenda for this year. I have enough trouble getting from day to day.

We just worked the menu out the other night! I am taking care of the appetizers, which are crudite and a spinach/artichoke squares. My husband does dinner, which this year is a pork roast that he stuffs with apricots, garlic and all kinds of other stuff (sounds gross, but it's sooo good), parmesan green beans and rice pilaf, as well as a huge lasagna!!! We always do a roast AND a pasta! Dessert is a fresh fruit plate, and ricotta cake!

OK... Now, I'm hungry!

I have no idea what we are doing for Easter, other than going to church and eating breakfast at church.

If we just stayed home, I would probably make a ham, some kind of potato thing, and a veggie. If I was really ambitious, I would make a sweet potato dish, too. Emily doesn't like sweet potatoes. The ham would have to come from Miesfeld's, too. Yummy! (local meat merchant)

I usually do a spiral ham and a turkey, but this year I am having less people over so I might just do a turkey.

We'll be eating at a homeless shelter with our youth group this year, so I expect day old bread and whatever else got donated that week--LOL. We'll prepare the food and then sit and eat it with the folks who come for the meal.

We usually have HoneyBaked ham and I make the sides, potatoes, mac/cheese, green beans, rolls, salad, sweet pots.
This year it's my birthday. We are going to the beach with friends. Then back to their house for a BBQ. Not sure of the menu; it's not up to me! LOL

Thank you all for your suggestions. That really helped us out.

I think we will have spiral sliced ham, broccoi cheese casserole, mashed potatos, and a layered salad with some rolls. And some kind of dessert.
