Need ideas for freezer casseroles

Moms View Message Board: General Discussion: Archive March 2008: Need ideas for freezer casseroles

OK My in-laws are coming to stay with the kids when we go to Hawaii.
They generally go out to eat almost every day. She does not like cooking anymore.
I want to have meals ready for her to simply stick in the oven.
Ideas?
So far I have:
Stuffed shells
Enchilada casserole
Ziti with sausage, tomatoes, & cheese
I need 3-4 more and maybe not Italian (as they above are)
Thanks!!!!

You could do a chicken pot pie, they freeze well and are easy to prepare.

you could do a chicken and rice thing.

But what about precooking some chicken breast and then buying some predone (microwave) mashed potato, or mac and cheese and green beans.

Also my kids love salad night, I boil egg, grill chicken, have other salad stuff and call it good.

Here is a recipe we like. Will she do the crockpot at all?

Sweet Mustard Chicken Bake
4 boneless, skinless chicken breast halves
1/2 cup honey
1/4 cup Dijon mustard
1/2 cup butter, melted
1/4 teaspoon freshly ground black pepper

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Grease a shallow baking dish.
In a small bowl, stir together the honey, Dijon mustard, melted butter and pepper. Place chicken in the greased baking dish, and pour the honey mustard sauce over it.
Bake for 45 minutes in the preheated oven, basting frequently with the sauce, until chicken is firm and juices run clear.
FROM FROZEN: Thaw. Preheat oven to 375. Place in greased baking pan and bake for 45 minutes basting with juices frequently, until done.
