Hi,

Trying to eat less meat.

So I substitued

1 Tempeh bar from health food store.
and
2 bars of Firm Tofu for meat.(Tofu can be frozen for added texture but not nessassy)

McCormick Chili Spice Mix

black beans canned

crushed tomato canned

frozen corn

Left over salsa

What ever else you would put in Chili like onions or peppers.

I made seasoned rice to go with. Delicios and so satisfying. You don't miss the meat at all.

Vegetarian chili

Ingredients

4 cloves garlic, minced
2 tablespoons olive oil
1 (28 ounce) can diced tomatoes, with juice
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (12 fluid ounce) can or bottle beer
4 tablespoons chili powder, or to taste
1 tablespoon mustard powder
1 teaspoon dried oregano
freshly ground black pepper
1 teaspoon ground cumin
1/2 teaspoon hot pepper sauce
about a tablespoon sugar
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can pinto beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can cannellini beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained and rinsed
2 cups shredded Cheddar cheese


Directions

1 In a 4 quart pot, saute garlic in oil.
2 Add diced tomatoes (undrained), tomato sauce, tomato paste, beer, chili powder, mustard powder, oregano, pepper, cumin, hot pepper sauce,sugar. Stir in the pinto beans, garbanzo beans, black beans, red and white kidney beans, and corn. Bring the mixture to a boil, reduce heat, and let simmer for 20 minutes. Top each serving with cheese (if you'd like).

My oldest dd has decided to become a vegetarian so I usually make a big pot of this every other week or so for her to have if she doesn't want what we are having for dinner.

I went to the health food store and bought textured soy protein (TSP, also called textured vegetable protein or TVP)

It was the bulk food was sold in the bins like the rice or nuts or cereal.


It is dry and you soak for 15 minutes or just put in chilli.

It is in granules or chucks. It is so so so cheap. People use it as a meat substitute. The granules are used like chop meat for meatloaf or lasanga.

I think I will try to use it instead of beef in beef stew.

I was talking to someone about being a vegetarian and he was talking about he felt so at peace with the world. I read the Peta literature and I am disturbed about what I saw.
