Stuffed Pork Roast

My DH usually will buy a pork shoulder and we do the cutting ourselves.We usually get 6 roasts out of it and extra cuts for stir fry. I just make stuffing for chicken in the box as per directions.When I cut my roast I cut it so I can fit half of the stuffing in it.I roll it and string it and put it in the crock pot with 1/2 cup of water.I like any fat on the roast to be on top so the juices flow through while cooking.I cook it on low for 8-9hrs.Just before its done I get the juices from the crock pot put it on the stove and make gravy.I've always had nothing but tender meat.I hated chewing meat for hours as a kid.
