/b{Liquid Lasagna – 2 days}

1 lb ground meat
1 lb ground pork
Sauté until brown- until all water (juices) cook off. Add and sauté till onions are translucent.
1 whole large onion finely diced
1 T basil
1 T oregano
1 t crushed red peppers (optional)
1 T fennel seeds (optional)
4 cloves minced garlic
Put in Crockpot
1 C red wine – heat thoroughly in skillet to absorb skillet flavors
Add to crockpot, stir then add
28 oz can of crushed tomatoes
Stir in, put lid on crockpot. Cook 12 hours on low
Next day add: stirring well after each addition
1 ¼ C Ricotta cheese – can add more for taste
1 ¼ C grated Romano cheese
Cook for 5 minutes on low

Serve over toasted French bread
Make a pizza- using mozzarella cheese
Can put on lettuce leaves (escargot is great)
Can pour over cooked pasta


/b{Crockpot Italian Wedding Soup}
Very forgiving recipe
Meatballs- make ahead of time
½ lb. ground beef
½ lb. veal
Mix together than add
1 egg, slightly beaten
1/4 cup breadcrumbs {Italian seasoned is best}
1 t. parsley {can add more for taste}
1 t. basil {can add more for taste}
1 t. oregano {can add more for taste}
1 t. salt and pepper
Mix well together than add:
¾ cup Parmesan Cheese
Mix well and form into tiny meatballs and place on baking sheet. Bake at 350 for ½ hour- till just cooked not crunchy. Drain on paper towels well. Freeze on tray and than put in freezer bag for to use as needed.
• Some say the meatballs smell funny cooking- still great tasting
To Make the Soup
Chop things fine and put in crock pot:
6 cups {large can} chicken broth
½ cup skinless cooked chicken cut up and chopped fine
¼ cup chopped celery {fairly fine}
¼ cup chopped carrots {fairly fine}
½ cup escarole {chopped raw} {can be substituted with spinach}
2 bay leaves
1 T. garlic powder
1 T. Mrs. Dash seasoning
¼ - ½ cup Romano Cheese grated right before serving
Put in meatballs
Cook on low for 10-12 hours
Serve with cheese on top


/b{Crockpot Reuben Pizza}
Place in crock-pot in order
2 Blocks Cream Cheese {8 oz each}
14 oz slightly Drained sauerkraut
1 ½ cup grated Swiss cheese {save some for topping}
1 cup caned beef chunks {canned} or sliced or regular
Cook on high 1 hour – stir well cook another hour
Than put on pizza crusts
Sprinkle with cheese, caraway seeds, and dill weed
Bake at 450 for 15 min.

Can hollow out round loaf of bread. Fill with this, and use bread chunks for dipping
Can also spread on toasted bread, be creative


/b{Crock pot Spinach Casserole}
Add ingredients in order.
Butter inside of crock-pot {can use Pam}
2 {10 oz} boxed of spinach, thawed and drained well – squeeze out all liquid.
Place in crock-pot
1 ½ lb. American cheese- sliced or brick- cut into cubes {DO NOT USE VELVETTA}
2cup cottage cheese
3 eggs pre beaten
½ stick butter chunked
1 t. salt {can omit}
¼ cup flour {I stir in with eggs and cottage cheese}
4-5 hours on low or 1 hour on high. Starts getting brown around the edges when done
Can serve on English muffins

Can make ahead and put in fridge uncooked till next day. Than take out and cook.
