Amy's Red Bean and Rice Recipe

1 lb kidney beans
3 tbsp vegtable oil
9-1/2 cups water
1 lb smoked sausage
1/2 green pepper - chopped
1 tbsp Tony Chachere's creole seasoning
1 rib celery - chopped
1 toe garlic - chopped
1 medium onion - chopped
3 parsley
1 large bay leaf
1 tbsp salt
1 tsp cayenne pepper

Rinse and sort beans. In large, deep pot, brown sausage in oil. Remove and set aside. In same pot saute onions, green pepper, garlic and celery until onions are soft. Add back sausage, beans and all other ingredients. Bring to boil and then simmer on medium for 3 hours.

I forgot to add that this is served over rice. The kidney beans are dry. /clipart{happy}

Do you cook the beans separately, like cook them first, before they are added to the mixture? I think someone was wondering how to cook the beans.

Bean Preparation:

Before cooking beans, examine, sort and rinse well, to remove residual material. Then soak using desired method. Beans can be cooked in large quantities and frozen for later use. To cook, discard soaking water; cover 1-lb beans with 6-8 cups of fresh water and cook for 1 to 1-1/2 hours, until tender.

Quick Soak Method:

For 1-lb of beans, soak in 6-8 cups of water in a large pot. Heat beans and water to boiling. Boil for 2 minutes; let stand for 1-4 hours.

Overnight Soak Method:

For every 1-lb beans, soak in 6-8 cups of water. Let stand overnight.

(When is it going to cool off, so I feel like making this kind of food? LOL! I do live UP NORTH, after all! Last time I checked the thermometer, it was 84!)

Dawn, I just sort the beans and throw out the bad ones. Then I rinse them with water. I don't soak them for any length of time. I then throw the uncooked beans into the mixture when I add all the other ingredients. You cook it for about 3 hours until the beans are soft.

Oh, so you can cook the beans, right in there! That's cool and would sure save time! thanks! this is on my list of things to make, when the cool weather gets here!
