MEXICAN SKILLET DINNER

1 lb. lean ground beef
1 c. chopped onion
1 c. chopped green pepper
3 cloves fresh garlic crushed
1 16 oz. can whole stewed tomatoes
8 oz. elbow macaroni
2 T. sugar
3 T. chili powder
1 tsp. salt
1 T. chopped jalapino peppers
16 oz. no-fat sour cream
½ c. shredded cheddar cheese


In a large, heavy skillet, brown crumbled ground beef over medium heat. Add ½ c. peppers, garlic and onion and cook about 10 minutes stirring occasionally. Drain tomato liquid into meat mixture. Cut tomatoes into bite sized pieces. Set aside. Add 1 cup water, noodles, sugar, chili powder, and salt; heat to boiling; reduce heat, cover and simmer 30 minutes stirring occasionally. Add sour cream and stir. In a small bowl mix tomatoes, green peppers and jalapinos; Cover meat and noodle mixture with tomato mixture. Sprinkle cheese over all. Cover again and heat over low for about 10 minutes or when heated through and cheese melts. Serve in Skillet.
