CORNISH HENS WITH APPLE PECAN STUFFING

4 Rock Cornish game hens
4 Tbsp. butter
6 small green onions with 1
inch tops, sliced
1 (3 oz.) can chopped
mushrooms
1/2 c. chopped pecans
1 small unpeeled apple,
chopped
6 slices bread, torn into
small pieces
salt and pepper to taste
8 slices lean bacon, cut in
halves
Melt butter. Add onions and mushrooms and saute until
onions are transparent. Toss onion mixture with pecans, apple,
bread, salt and pepper. Add enough water to hold mixture
together. Stuff each hen with mixture. Close cavities with
skewers. Brush hens with cooking oil on all sides. Place
hens, breast sides up on a rack in roasting pan. Bake at 350 degrees
for 2 hours or until done. During last hour of cooking time,
arrange bacon on top of hens. Makes 4 servings.
