Chicken Newburg

Chicken Newburg

1/4 cup chopped onion
3 tablespoons butter
3 tablespoons flour
1 teaspoon salt
dash pepper
1/4 teaspoon crumbled dried tarragon
1 cup chicken broth
1/2 cup milk
2 cups cooked diced chicken
1 egg yolk, lightly beaten
1 tablespoon lemon juice
1/4 cup sherry
2 tablespoons chopped pimiento


In a saucepan, cook onion in butter. Stir in flour, salt, pepper, and tarragon. Add chicken broth and milk. Cook over low heat, stirring constantly, until sauce is thick. Add chicken then lightly blend in egg yolk then lemon juice.
Stir in sherry and pimiento. Heat thoroughly but do not boil. Serve on toast, rice, or patty shells.
Serves 4 to 6.
