Need tomato recipes

I went out to the garden yesterday and started picking tomatoes. I lost count after 30, but I have 3 walmart sized bags full to the top. I have 3 different kinds, regular salad/sandwich type tomatoes, yellow pear shaped cherry tomatoes, and grape which grew to the size of plum tomatoes. I am trying to make sun dried (or oven dried actually) today, with some of them, but I definately can use some more ideas.

My Aunt makes a really good tomato pie. She buys the ready made pie crusts too. She peels and slices tomatoes. Then, she does a layer of tomato slices,drizzle of olive oil, fresh basil, and mozzarella cheese. She keeps layering, then covers with another pie crust and bakes. It's really yummy!

What about making tomato soup?

Ok Colette, I called the expert, my sister! LOL! She makes it all the time. It's been over a year since I've had it and I guess I just forgot!

Ok, my sister says you can peel or not peel the tomatoes, she does either. There is no crust on top! You do a layer of tomatoes, then a layer of fresh basil, then grated mozzarella cheese, and keep layering. Then, drizzle olive oil just over the top. My sister says she puts a heavier layer of cheese on the very top. She says she adds minced garlic to in sometimes and it's really good. She bakes at 350 until it gets brown and bubbly.

It is really yummy. My DH doesn't like tomatoes, so I never make it! I hope that helps!:)

Bruschetta (sp?!)... toasted bread with tomatoes, olive oil, cuncks of mozzerella, and basil. I also made a chicken recipe the other day. Garden spiral pasta (tri-color), cut up chicken breasts, diced tomatoes, oregano, basil, mozzerella... all tossed together. It was yummy. I cook without recipes, I usually just add amounts until it looks good, so I couldn't tel you how much I put of each ingredient... just have some fun with it!!

Spinach-Stuffed Tomatoes

2 tablespoons bacon drippings
1/3 cup chopped onion
8 ounces fresh spinach, chopped
1/2 cup sour cream
3 slices bacon, fried and crumbled
Tabasco sauce, a dash or two
4 medium tomatoes
salt, to taste
1/2 cup Mozzarella cheese, shredded


In a heavy skillet, cook onion in baking drippings until tender. Stir in spinach; cover and cook for about 5 minutes, until tender. Remove from heat and stir in sour cream.
Cut off tops of tomatoes; scoop out centers, leaving shell intact. Sprinkle tomato shells lightly with salt and fill with spinach mixture. Place tomatoes in a lightly greased baking dish; bake at 375 degrees for 20 to 25 minutes. Top with cheese and continue baking until melted.
Serves 4.

Baked Stuffed Tomatoes

4 plum tomatoes *
1 cup fresh bread crumbs
1/4 cup chopped fresh Italian parsley
2 T nonfat mayonnaise
2 tsp balsamic vinegar
1 clove garlic, minced
Salt and black pepper
2 T chopped fresh basil



Coat a small baking sheet with non-stick spray. Slice the tomatoes in half lengthwise and remove and discard the seeds and pulp, leaving the shells intact. Set on the prepared baking sheet.

In a small bowl, combine the bread crumbs, parsley, mayonnaise, vinegar and garlic; add salt and pepper to taste. Fill the tomato shells with the bread crumb mixture.

Bake at 350 degrees for 15 to 20 minutes, or until the tomatoes are soft and the stuffing is heated through. Sprinkle with the basil just before serving.

*Instead of plum tomatoes, you may use two large garden tomatoes; halve crosswise. Increase the baking time to 25 - 30 minutes, then check for doneness. Allow one half per person.

Broiled Oregano Tomatoes

4 large tomatoes
2 ounces butter (4 tablespoons)
1 tablespoon fresh oregano, chopped OR 1 1/2 teaspoon dried oregano
1 clove garlic, finely minced or pressed
black pepper
pinch salt
2 tablespoons grated Parmesan cheese



Cut the tomatoes in half horizontally and place in a shallow flameproof dish.
Beat the butter with the oregano, garlic, pepper, salt and Parmesan in a bowl. Spread the mixture over the cut side of each tomato.
Broil the tomatoes under medium heat for about 5 minutes until the topping is just turning golden. Serves 4

Chicken with Tomato

2 each whole chickens, about 2-1/2 pound, Cut into eighths
1 Onion, chopped
2 cloves Of garlic, chopped
Salt & white pepper to taste
1 each Green pepper, diced
2 medium Very ripe tomato, Peeled
Seeded and chopped
1 cup Dry white wine
Pinch of cayenne pepper


Combine all ingredients in slow-cooker. Cover pot and set at Low. Cook for 6 to 8 hours, or until chicken is tender.
Serves 6 to 8

Those all look good too. I just picked another stupid bagful. Anyone want some? I am also overloaded with zuchini (spelling?). I picked 7 off of ONE plant the other day.

Buffallo mozarella with fresh tomatos.


With alittle fresh basil if you have it.

If you really just want to get rid of them. Chilli with fresh tomatos. Or beef stew with fresh tomatos
