I've got soem left over boiled potatoes that I want to use up.

Irish Potato Pancakes
Bette E

Ingredients:

3 Boiled potatos
2 tsp flour
2 Tbsp milk
1/2 c. (very fine) diced onion
Butter, salt and pepper

Directions:

1. Peel and cook the potatos, OR: use leftover boiled potatos.
2. Mash potatos well, and add the flour and milk until mixture is moistened but not wet. Mash in the diced onion, butter, S & P.
3. Shape into 4 " patties, and fry in a saucepan with butter over medium heat until browned and heated through.
