HELP! Need recipe for Mozzarella Sticks

I am looking for a good, good recipe for Mozzarella sticks - preferably one where most of the sticks do not "fall apart" with cheese oozing out everywhere, LOL. My dh loves mozz sticks, and the last recipe I tried turned out to be a flop. So, I thought I would ask here. Thanks in advance!! :)

Crystal - I've had homemade mozz sticks before, and they are soooo yum. I just need a good recipe!

Fried Mozzarella Cheese Sticks
These fried cheese sticks are very easy to prepare and sooo good. Enjoy!
Prep Time: approx. 15 Minutes. Cook Time: approx. 15 Minutes. Ready in:
approx. 30 Minutes. Makes 8 servings.

2 eggs, beaten
1/4 cup water
1 1/2 cups Italian seasoned bread crumbs
1/2 teaspoon garlic salt
2/3 cup all-purpose flour
1/3 cup cornstarch
1 quart oil for deep frying
1 (16 ounce) package mozzarella cheese sticks


Directions
1 In a small bowl, mix the eggs and water.
2 Mix the bread crumbs and garlic salt in a medium bowl.
3 In a medium bowl, blend the flour and cornstarch.
4 In a large, heavy saucepan, heat the oil to 375 degrees F (190 degrees C).
5 One at a time, moisten each mozzarella stick in the egg mixture, then dip first into the
bread crumbs mixture, then the flour mixture, and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

Mozzarella Sticks II
Mozzarella cheese sticks are dipped in a tasty beer batter, then deep
fried. Be careful when you take that first bite of hot, gooey cheese! Prep
Time: approx. 20 Minutes. Cook Time: approx. 10 Minutes. Ready in: approx. 2
Hours . Makes 16 servings.

1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
3/4 teaspoon salt
1 pinch ground white pepper
1 cup beer
4 cups safflower oil
1 egg white
1 pound mozzarella cheese sticks


Directions
1 In a medium bowl, mix together flour, baking powder, baking soda, salt and white pepper.
Gradually pour in beer. Whisk briskly. Cover and allow the mixture to stand 90 minutes.
2 In a large, deep skillet, heat safflower oil to 375 degrees F (190 degrees C).
3 Whip the egg white into the batter. Dip mozzarella cheese sticks into the batter.
4 With a slotted metal spoon, place coated cheese sticks a few at a time into the hot oil. Fry
2 1/2 to 3 minutes, until crisp and golden brown. Drain on paper towels and serve hot.

I found a recipe for little triangles like the ones at Olive Garden. Try searching for Copy-cat recipes from restaraunts, you may have some luck with those!
