BLUE CHEESE AND WALNUT SALAD

1 c. olive oil
1/2 tsp. sugar
1/3 c. red wine vinegar
1/4 c mayonnaise
1 T. Dijon mustard
1 T. chopped chives
1 clove garlic crushed
1/4 tsp. salt
1/4 tsp. freshly ground pepper
1/8 tsp. each dried parsley, tarragon and basil
1 head garden leaf lettuce washed and spun dry
1/4 c. chopped walnuts
2 oz. blue cheese, crumbled


In a small fry pan toss walnut pieces in 1 tsp. butter over high heat for 1 minute until toasted: set aside. In a small bowl with a wire whisk, mix mayonnaise, mustard, chives, garlic, herbs, sugar and salt. Can also be shaken in a jar with a lid. In a large salad bowl, toss lettuce with dressing until coated. Do not add too much dressing. The reserve may be used later. Sprinkle with pepper, cheese and walnuts. Serve immediately.
