Yummy cake! Must try!

1 yellow cake mix
1/2 cup oil
4 eggs
1-11 ounce can mandarin oranges with juice
(they get chopped up when you mix)

Mix & bake at 350 degree for 25-30 min or until done. I use 2 small round cake pans. I also grease & flour the pans.

Frosting:
1 cup crushed pineapple(drained really well)
1-10 ounce Cool Whip
1-3 ounce Vanilla pudding (Make for pie filling)

I make the pudding ahead of time and cool for a bit. Then, I add the Cool Whip and pineapple. The whole cake is great even in the fridge.

This is not sweet-sweet. It sounds it, but it really is not at all. I am not a huge fan of cake or frosting. I am not crazy about pineapple either. This is fabulous. Very refreshing!! I served it last night & it went over really well. It always does!! Yummy! I hope you try this. You'll be so glad.

Eve, sweetie, I'm a cook at heart, and have never seen this recipe. (I caught it in the recipe exchange). Gosh Dang You!!! I baked it today and I'm not sure I didn't eat almost half of it!!!! This is one true gift that I will most definetly give to all my cooking friends! Thanks from the bottom of my full tummy.

Eve, my mom makes this cake for my birthday every year, and it is a very yummy yummy cake. I swear I could eat the whole cake very easily. LOl

So glad you liked it Sheriann! It is a treat! I swear, I am so glad I gave half the cake away! LOL! It is wild- think I could eat the whole thing. I don't even really like cake that much! LOL!

Mel & Trina, it's worth trying. Even if you want to bring it somewhere. Everyone LOVES it!!

Kasey-I think I will have my DH make it for my birthday from now on!! LOL!

I am going to try this one out on our Bible Study group next week. I may substitute the Pineapple in the frosting as my husband doesn't care for it. I will try it sometime with the pineapple though. Sounds heavenly ladies!!!!

Camilla-try it without the milk. The frosting comes out thicker! Just mix the pudding mix right into the cool whip! Then, the pineapple is juicy and it comes out perfect! Good luck! Let me know what you use instead of pineapple. I love trying new things! Good luck!

Eve - Thanks for the tip! I will try that. I may try using Dream Whip instead of Cool Whip. My mom has a great frosting recipe that is made that way only hers doesn't add the fruit. So that will probably be my variation of the frosting recipe. And that would be substituting the milk too for the fruit juice. Very tasty!! Yum Yum!
