Cheesy Dijon Chicken

Cheesy Dijon Chicken

1-6.5 oz package Rice a Roni Broccoli Au Gratin-(it is packaged rice)
2/3 c. Dry bread crumbs
1 3/4 t dried basil
1 t onion powder
5 uncooked boneless,skinless chicken breasts
2 T Dijon or prepared mustard
2 eggs, slightly beaten
1/4 c. vegetable oil
1/2 c. (2 oz) shredded cheddar cheese


Prepare Rice-a-Roni Mix as package directs. Combine bread crumbs,basil and
onion powder. Spread one side of chicken with mustard. Coat with crumb
mixture; dip into eggs, then again in to crumbs. In second skillet, heat oil
over medium heat. Add chicken; cook 6 minutes each side orutnil brown. Top
rice with chicken and cheese. Cover and let stand 5 minutes.
Makes 5 servings.
