Scallopini Di Genoa

SCALLOPINI DI GENOA

1 ½ lb white meat (turkey, chicken, veal or pork)
½ c. grated parmesan Cheese
2 eggs
1 T. basil
1 T. powdered garlic
2 T. fresh parsley, chopped
¾ c. plain breadcrumbs
½ c. oil
½ lb. fresh mushrooms
¾ c. white wine
6 oz. provolone cheese
6 oz. sliced ham or prosciutto
1 small lemon sliced

Clean and slice mushrooms. Set aside.
Flatten meat slices with the flat of a large knife or with a meat mallet.
Mix basil, garlic and bread crumbs in a shallow bowl.
Coat meat slices with parmesan cheese; then dip in beaten egg, then coat with breadcrumb mixture.
Heat oil in skillet and brown meat lightly.
Remove to shallow baking dish.
Top each slice of meat with slices of ham and then cheese.
To the hot skillet, add mushrooms and wine.
Stir over low heat to loosen pan drippings. Spoon over meat slices.
Cover and bake at 325 degrees for 30 minutes.
Garnish with parsley and lemon and serve.
