I need some inspiration, seriously!
I didn't make my usual menu for this week and I can tell. I have no idea what to make for dinner tonight, and really nothing sounds good to me. Nothing to 'quickie' because we had family in town all last week, ate out often, and when we ate at home, it was quick sandwich-type/pizza stuff.

So what's for dinner at your house? Maybe I'll get inspired. :)

Last night I made homemade chicken and dumplings. That's my major comfort food.

I have no clue what we are having either. We usually eat in 15 minutes, so not only am I not sure what to eat, but I am running way behind schedule. DH has asked me three times what I am fixing... LOL Poor guy.. Kids want, mac and cheese, and beans and weaner's LOL

Melissa, that's what we had last night. It seems ridiculous when it's in the 90's but that's what sounded good.

Tonight is beef enchiladas, homemade creamed corn, rice, salad and frozen yogurt for dessert.

We are just bbq'ing hot dogs and having some pasta salad. Nothing fancy. We did lasagne last night and I did a crock pot roast the night before, so we (well, I) are ready for something easy :)

Texannie:

Sauce:
1 teaspoon garlic powder
1 (10-ounce) can condensed reduced-fat cream of chicken soup, undiluted
1 (8-ounce carton) fat-free sour cream
1 (4.5-ounce) can chopped green chiles, undrained

Enchiladas:
Cooking spray
1 cup chopped onion
1 jalapeño pepper, seeded and chopped
2 cups sliced mushrooms
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon salt
2 (10-ounce) packages frozen chopped spinach, thawed and drained
1 cup (4 ounces) shredded Monterey Jack cheese, divided
10 (6-inch) corn tortillas

Garnish:
1/2 cup chopped seeded plum tomato
1/4 cup chopped green onion tops

Preheat oven to 350°.
To prepare sauce, combine first 4 ingredients; stir well.

To prepare enchiladas, heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion and jalapeño; sauté 5 minutes or until tender, stirring frequently. Add mushrooms; sauté 3 minutes or until tender. Stir in garlic powder, cumin, salt, and spinach; cook 5 minutes or until heated. Combine spinach mixture and 1/4 cup cheese in a large bowl; stir to combine.

Spoon 1/2 cup sauce into a 13 x 9-inch baking dish coated with cooking spray. Warm tortillas according to package directions. Spoon about 1/3 cup spinach mixture down center of each tortilla; roll up. Place filled tortillas seam sides down in the baking dish. Spread remaining sauce evenly over tortillas; top with 3/4 cup cheese.

Bake at 350° for 20 minutes. Top with tomato and green onion.

Yield: 5 servings (serving size: 2 enchiladas)

This is a very yummy enchilada and a healthy recipe.

We had meatloaf, steamed veggies, sweet potatos for dh and I/baked potatos for my dks, and fruit salad.

DH is out of town so we had Taco Bell & McDonald's. It's hard to be motivated to cook when he's gone and the kids don't get out of swim team practice until 7pm and then don't want to wait because they are STARVING!

We ended up having pork chops as well, with baked potatos, mac & cheese for DH (he rarely does veggies!), and mixed veggies for DD and I. It was really good - I'm glad I got motivated.

We're having spaghetti and garlic toast tomorrow night. It's Natalie's 4th birthday tomorrow and that's what she wants for supper. Her fave. :)

I feel like I need a serious dinner makeover. We're in a rut.

Yvonne, that sounds wonderful. I have a recipe similar but you add chicken and stack the tortillas rather than roll. you also top with sliced avocado.

tonight we are having brauts... too hot to cook inside.. So DH can slave away at the grill for a few min and keep the house cool.. I will pick up some potato salad and chips on the way home.. so I don't have to do anything. And we are kidless.. so even easier since no one will complain.

Tonight it's Blueberry Pancakes for dinner. Just for the simple fact that we actually HAVE blueberries in the house (which is rare) and dh always wants blueberries in his pancakes.
So there ya go :-)

Tomorrow it's some sort of chicken with potatoes and after that it is cheesy baked tortellini and garlic bread and perhaps a salad.

Melissa, want to share the recipe for the glaze? My family loves meatloaf but I get tired of it and would like something to "jazz it up".

Well, I was going to grill burgers but two of my kids are away for the night and my other two are playing outside and not interested in dinner right now. I may just grill them anyway and heat them up when they do decide they are hungry :)

Tink- I use 1/4 cup brown sugar, 1/2 cup ketchup and 1/4 tbsp. worcestershire sauce. I also sprinkle the bottom of the loaf pan with brown sugar and squeeze some ketchup on top of that before putting the meat in.

In the meat itself (1- 1 1/2 lbs) I add 1 small white onion, salt and pepper to taste, 3/4 c milk, 2 eggs, 1/4 tsp ground ginger and 3/4 c saltine crackers. If i'm in a really sweet mood (like tonight) i'll add some brown sugar to the meat as well. :)

Cook for an hour at 350... enjoy! (LOL)

I always put country sausage in my meatloaf and it is absolutely YUMMY! I could eat it every week and not care one bit. :) The sausage really gives it a lot of flavor. Now when I eat regular meatloaf it tastes so plain.

It's a recipe that my MIL gave me.

Pam, here is the recipe I use for the creamy pesto sauce:

Ingredients:
1 cup fresh basil
1/4 cup pine nuts roasted in olive oil
1 cup olive oil
1 cup grated Parmesan cheese
3 cloves garlic
1 cup heavy cream

Directions:
Place all ingredients except cream in a food processor or blender. Blend until well mixed, but not entirely smooth (mixture should still have some texture). Add cream (cream may be reduced slightly in a saucepan over medium heat, if you desire a thicker sauce). Serve over your favorite pasta.

I will have dh write down the recipe for the enchiladas. It is his mother's recipe, that he has made with her since he was a kid. He doesn't have it written down, just does it from memory.

We are having Spaghetti and Meatballs. I made The sauce and 5 pounds of meatballs a month ago. I froze it in serving sized containers. We thaw, cook some pasta, warm the sauce and meatballs and dinner is served.

Paula, here are the recipes:

Broccoli Salad
* 1 large head of broccoli florets, chopped
* 1/2 medium red onion
* 1 pound turkey bacon, cooked and chopped
* 2 tablespoons vinaigrette salad dressing
* 1/2 cup shredded mozzarella cheese
* 1 teaspoon honey mustard
* 1/2 cup chopped almonds or walnuts
* salt, pepper, and garlic powder to taste

1. Prepare turkey bacon, set aside.
2. Clean and chop broccoli florets to desired size.
3. Finely chop onion.
4. Add all ingredients in medium bowl. Mix well. Cool in refrigerator at least 30 minutes before serving. Even better the next day!
Serves 8-10.

Buttermilk Pecan Chicken
1/3 c butter or marg
1 c all-purpose flour
a c ground pecans
1/4 c sesame seeds
1 T paprika
1 1/2 t salt
1/8 t pepper
1 egg. slightly beaten
1 c buttermilk (I never use buttermilk, but reg milk with 1 t vinegar)
8 chicken breasts
1/4 c coarsely chopped pecans

Melt butter in 13 x 9" dish; set aside. Combine flour and next 5 ingredients. Combine egg and buttermilk. Dip chicken in egg mixture and then dredge in flour mixture, coating well. Coat both sides of chicken in melted butter-leave in dish. Sprinkle with chopped pecans. Bake at 350 for 30 minutes or until fork tender.

For potatoes, just boil until tender, about 20 minutes. Mix with melted butter, parsley, and chives.

No kids here tonight. I had a reheated grilled burger from the other night.
When I pick up dd from work, I'm going to have her bring me a bowl of their gumbo. She works at a local seafood place on the beach.
