Veggie Dishes

As I posted in another thread, my dh and I are doing a detox diet. 21 days of only veggies and fruit (organic if possible), preferably raw and special shakes. Then we go on a modified plan of 21 days with veggies, lean protein and wild or brown rice allowed.
For this meat loving, chocoholic, pasta scarfing, take out queen it has been quite a change. But I do feel good. 10 days into it and I've dropped just about 10 pounds.
Now, for my question: Any yummy veggie dishes you can recommend that don't use sugar, salt, oil, grains or dairy? I do cook one meal at night, I need to have one hot meal, so dinner veggies are not raw.
I've made spaghetti squash, eggplant not parmigiana, grilled portobello mushrooms, some awful looking thing with potato and steamed spinach and nothing else really worth mentioning.
Any suggestions?

Can you use balsamic vinegar? How about a bunch of grilled veggies - tomatoes, squashes, red onion, red and green peppers, etc - chop them up, add some balsamic and put it on top of the spaghetti squash.

I vote grilled veggies too! You can even make veggie shish-ka-bobs. Our favorite veggies on the grill are asparagus, zucchini, yellow squash, green peppers, mushrooms, and onions. We also like grilled pineapple.

I recently made a salad type side dish from corn I cut off the cob (it was raw), chopped avocado, cherry tomatoes (cut in half), and diced red onion and for a dressing I used fresh lime juice, lime zest, and olive oil. I would suppose that you could skip the olive oil if it isn't on your eating plan and just use the lime juice and zest. It really had a refreshing summer-like taste to it and it would be easy to add other veggies to it if you like.

WE are big chineese food eaters, we do water chestnuts, zuccini, snow peas with soy sauce.

If you are avoiding wheat - stay away from soy sauce. Try Braggs, it's low in sodium and has no wheat.

I have a Moroccan Stew which is great but you will need a bit of oil, maybe about 1 tbsp. Let me know if you want the recipe. It's got carrots, sweet potatoes, garlic, tummeric, cinnamon, chick peas etc. The kiddos love it because the cinnamon and sweet potatoes give it a lovely sweet flavor without sugar. I serve it over brown rice.

If you want a nice sweetener once you have finished your detox try Agave Nector it tastes a bit like honey and has a similar consistency and the same amount of calories but it will not spike your blood sugar which is great when you are trying to lose weight.

Hey Thanks everyone!
Last night I sliced peeled eggplant and zucchini very thin and layered them in a baking dish with mushrooms and a little onion. Spritzed them with olive oil (not really allowed, but I can't live without my EV Olive oil). Baked the whole thing for an hour and a half and then just before serving put it under the broiler to crisp the top layer. It was yummy!

I'm not missing sugar, but I really am missing my meat! I don't feel I've really eaten if I don't have meat. I can't do soy yet or chick peas or any kind of beans or peas yet.

Aside from portobello mushrooms, which I'll grill for dinner tonight, can you think of any other veggies that have a texture and taste similar to meat? I'm looking for something we can actually cut with a knife, lol!
