Need dessert help

We are doing something different than we usually do for Thanksgiving this year and I need some help! I am NOT a pie baker or eater and I am supposed to take dessert! Does anyone have a good pumpkin dessert they make? Or any other ideas of what I can make? Oh, it is times like this that I wish I was a good cook!!

I have an awesome recipe for a super easy chocolate pecan pie!! Not sure if this would fit the bill since it is not pumpkin, but I take it every holiday and always get lots of raves.

1 cup light corn syrup
1/2 cup sugar]1/4 cup marg. or butter, melted
1 tsp vanilla
3 eggs
1 6oz pkg semi sweet choc chips
1 1/2 cups pecan halves
1 frozen deep dish pie crust

Heat oven to 350. Place cookie sheet in oven to preheat.

In lg bowl combine corn syrup, sugar,margarine, eggs and vanilla, beat well. Place choc hcips in pie crust. Then put pecans on top of chips in crust. Pour syrup mixture over pecans.

Place pie on heated cookie sheet. Bake at 350 for 55 to 65 minutes or until deep golden brown and filling is set. cool completely. Store in refrigerator.

That sounds great, but I would rather not take a pie that I have to make! LOL I will probably find a good local baker for the pie!!

Does anyone have a recipe for a pumpkin cake or something that I can make and take whipped cream to have with it (the kids LOVE the whipped cream)?? I might make a couple of different things!!

No, I am not nervous about it. Cheesecakes are best when made at least a day early so if I totally mess it up I'll just run out to the bakery. I'll post it on the recipe board.

One time I made something that I had never made before and it had the simplest of ingredients and I thought it would be sooo good!! Took it to a friends house and after dinner we cut it up and ate it and it was terrible!!!! LOL Thanks goodness they were really good friends and we all laughed about it and had ice cream instead!! Ever since then I am so nervous about making something new!! LOL

I found this and it looks very easy and very impressive. It's from the Nestle baking website so it should be pretty good. I may try making this myself, since our family doesn't like pumpkin pie.

Pumpkin Roll-Up Cake

Ingredients:

CAKE
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1/2 cup Sugar
2/3 cup LIBBY'S 100% Pure Pumpkin
1 cup walnuts, chopped (optional)
FILLING
1 pkg. (8 oz.) cream cheese, softened
1 cup sifted powdered sugar
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
Powdered sugar (optional)


Directions:
FOR CAKE:
PREHEAT oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and Sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:
BEAT cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving.



NOTES:
Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

Two super easy recipes that people always ask for and are always gobbled up.

#1
-can of fruit pie filling (apple is my favorite, cherry is second choice)
-box of dry cake mix filling (yellow or white preferably)
-stick of butter
-2 oz of crushed pecans or walnuts

In a 9x9 pan spread the pie filling on the bottom.
Then spread the dry cake mix. Then put the stick of butter all over the dry cake mix in little pats. Then sprinkle the nuts. Put in the oven and bake at 350 for 30 minutes or until it is lightly golden brown.

Easy recipe #2
Take 2 rolls of double chocolate chip cookie dough and let set at room temp until soft. Then spread flat across a 9x13 cookie sheet. Pour small jar of caramel ice cream syryp all over. Bake in the oven using temp and time on the package. It may take a little more time because of the syrup. It's yummy and gooey.

They are easy and everybody always thinks I did something great.

This is so simple and great for the Holidays.

CHERRY CRISP

1 can light cherry pie filling
¼ c. granulated sugar
½ c. light brown sugar
1 c. biscuit mix
½ c. chopped walnuts
½ tsp. cinnamon
¼ tsp. nutmeg
¼ c. butter or margarine


Preheat oven to 350°. In a medium bowl toss together brown and granulated sugar. Add biscuit mix and mix well. Toss spices and nuts until well blended. Melt butter and add while tossing until mixture forms a crumb consistency. Pour pie filling into glass or ceramic pie plate. Sprinkle crumb mixture to cover top. Bake for ½ hour or until hot and bubbling. Serve with ice cream or whipped cream.

Note. I chop the nuts in my food processor. Then I add the Bisquick, sugars and spices. Then I drizzle the melted butter in while it's running. It's all made in the processor bowl.

Pumpkin Gooey Butter Cake

Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees F.
To make the cake: Combine all of the ingredients and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. Prepare filling.
To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.
Serve with fresh whipped cream.
Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.
For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.
For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

I made a pumpkin bread pudding the other day-super easy. I am not a pumpkin pie fan, but I liked this. It has a really easy caramel sauce that goes with it.

I personally love stuff that is easy and good. These recipes sound great. And since it looks like Christmas at our house this year, these will come in handy.
