...the difference between a total carb...and a net carb ?My diabetes councelor said to just look at the total carb count, but now so many things are talking about net carbs.

I had gestational diabetes, and my Diabetes Educator taught me to count my carbs like this...

On the Nutrition Facts label:
Look for "Serving Size"
Skip down to "Total Carbohydrate"

For example, on a box of Cheerios.
Serving size is 1 cup.
Total carbs = 22 g

Total Carbs minus Dietary Fiber equals Net Carbs. For example, if total carbs are 6g and dietary fiber is 4g, then net carbs are 2g.

You can subtract fiber from total carbs to get net carbs. You can't digest fiber.

There is also some that subtract the sugar alcohols like malitol to get net carbs.
