Looked on the recipe board, nothing, looked on the internet loads of them, however, I'm looking for one like mom used to make. It was really light and fluffy almost custard style...

Any recipes...

Have you tried www.allrecipes.com ? That is a site I use quite often when looking for a recipe. Just do a search on baked corn and see what it pulls up... Good luck! :)

Corn Souffle
1 can cream style corn
1 can whole corn (drained)
1 box corn muffin mix
1 cup sour cream
3 eggs beaten
1 stick butter, melted
1/4 cup mayo

Combine all ingredients and pour into flat casserole dish. Bake 15-20
minutes at 350 degrees


my mom makes this and it is sooooo good, it is so light and fluffy,

TANGIER ISLAND CORN PUDDING

Adapted from a several hundred year - old Chesapeake Bay dish widely cherished.
2 eggs, lightly beaten
1 can creamed corn
1 can evaporated milk
1/4-1/2 c. sugar
2 tbsp. butter


Mix cornstarch and sugar. Add eggs and melted butter. Mix in the corn and evaporated milk. (For dessert pudding, add 1 teaspoon vanilla extract). Bake in 1 quart uncovered casserole dish at 350 degrees almost 1 hour. Shake lightly to see if it does not get hard - a soft curd custard consistency. Can be doubled. Serve hot (let stand 5-10 minutes) or cold.

Kenna,

I wanted to try yours so bad, but I had no corn muffin mix or sour cream on hand. Since the kids were home today, I was too lazy to go anywhere.

Bea, I hope you see this, because that looks so close to my mom's I am so curious. However, when you go down to your instructions it states mix cornstarch and cornstarch is not in the measurement list!!
