Dh offered to go to a Judo competition on Valentine's Day:(

Moms View Message Board: General Discussion: Archive February 2004: Dh offered to go to a Judo competition on Valentine's Day:(
By Marg on Sunday, February 8, 2004 - 03:12 pm:

I don't think this upsets me...

One of his Judo students (a man in his 40's) ask dh to go only to the event and coach him. It will be an all day event, and is over an hour away.

I'm thinking of surprising him when he gets him to a really fancy meal;)

My dh and I love each other so much that it really doesn't matter.

I used to have a client who was in his 70's and married over 50 years, when I'd ask him what they did "special" on Valentine's Day, he said it's just another day, if you really love your spouse every day is Valentine's Day. He couldn't have summed it up better for dh and I. I won't dare accept roses from him this time of year due to the price and now that I think about it we usually exchange cards but that's about it. Our anniversary is on the 22 and we try to save our money to take a mini-vacation this time of year. But due to the recent weather it may be postponed until March or April.

He really likes crab dip or crab imperial, any good recipes?

MINI CRAB PUFFS

1 6 ½ oz can crabmeat or 6 oz. imitation crabmeat
½ c. (2 oz.) shredded Cheddar cheese
3 scallions, minced
1 tsp. Worcestershire sauce
4 eggs
1 tsp. dry mustard
¼ tsp. salt
1 c. water
½ c. butter or margarine
1 c. flour

Mix together first seven ingredients. Set aside. In a large saucepan, heat water and butter to boiling. Remove from heat immediately add flour: beat until mixture leaves sides of pan and forms a ball. Add eggs, one at a time, beating until each is incorporated completely. Beat in crab mixture. Drop teaspoons of dough about 1 inch apart onto ungreased baking sheets. Bake at 400° for 20 to 25 minutes, until golden brown. Cool and freeze. To serve, reheat frozen puffs at 350 ° for about 10 minutes. Yields about 5 dozen.

CRAB CANAPE'S

2 oz. bread crumbs
2 tsp. cooking oil
1 T. lemon juice
1 T. Worcestershire sauce
½ c. sour cream
6 oz. crab meat or imitation crab meat
1 T. fresh parsley chopped
dash salt & freshly ground black pepper
crackers, paprika, parsley sprigs

In a medium heavy sauce pan over low heat, mix together bread crumbs, oil, lemon juice, Worcestershire sauce, crab meat parsley, salt and pepper. Toss for about 10 minutes. Taste and adjust seasonings. Spoon on to crackers. Garnish with a sprinkle of paprika and a small snip of parsley. Serve immediately.

ARTICHOKE AND CRAB DIP

1 (14 oz.) can artichoke hearts, drained and chopped
1/2 c. mayonnaise (real)
1 c. Parmesan cheese
1 (6 oz.) can crabmeat, drained
1/2 tsp. paprika
1/3 c. dry bread crumbs

Combine first 4 ingredients, put into pretty baking dish (pie pan size) and sprinkle with crumbs and paprika.
Bake 325 degrees for 30 minutes.
Serve with crackers or sliced and toasted French bread.

BAKED CRAB IMPERIAL

1 tbsp. chopped pimento
1 tbsp. chopped green pepper
2 tbsp. mayonnaise
1 tsp. prepared mustard
1/2 tsp. Worcestershire sauce
6 saltine crackers, crushed
1 whole egg
1 pound back fin fresh crabmeat
1 cup mayonnaise
2 egg yolks

Mix above ingredients separately. Add fresh crabmeat. Mix very lightly. Form into Imperial mounds in crab shells, but do not pack too firmly (4-6 servings). Coat with remaining mayonnaise mixed well with egg yolks. Bake at 425 degrees until golden brown. Serve hot.

Bea,

He really likes crab imperial, but the crab puffs sound really good. What do you suggest?

That is so sweet of you to plan a special dinner for him. I remember one Christmas dh ended up having to stand a special duty on Christmas day and didn't find out until Christmas morning. We had planned to go to my Aunts house for dinner so we didn't have much at home and all the stores were closed. I made a meatloaf casserole and we sat in the car just the 3 of us (ds was 1) and had Christmas dinner togeather. Now everytime I make meatloaf, dh says remember when....

The puffs are different, but a man would probably prefer the Imperial. It has more UMPH!

My dh is going with some friends to a farm show in Kentucky! :( I think the girls and I will go out for a fancy dinner and a movie! :)
