Any good recipes for carrots?

Moms View Message Board: General Discussion: Archive January 2004: Any good recipes for carrots?

I have a bag of frozen carrot slices. I don't really like the flavor of carrots all that much. Does anyone have a recipe that will make them taste better? Maybe the kids will eat them too!

I like to heat them in a small amount of butter and then mix in honey and sprinkle with parsley, right before serving. Mmm, maybe I will make them tonight. :)

My grandma always put a little butter and brown sugar in them. Good luck! :)

I do them in the microwave and throw in a guess-sized glob of orange marmalade, stir, back in the microwave for 20-30 seconds, stir and serve. Pretty much like Collette's steaming in orange juice, with a little sweetness added.

I do this with the baby whole carrots for holiday meals.

Try using orange juice in place of the water (while cooking in microwave)....then, drain the juice out and put some butter and maple syrup on and microwave another minute or two - maybe not the healthiest way to serve carrots, but my kids love them! :)
