for dinner tonight?? I am getting bored with the same old dinner. Need some new ideas.
I think we will be having leftovers tonight. DH made cabbage rolls (pigs in the blanket) yesterday and I think it will be a fast leftover dinner tonight.

Hmmm...not sure yet. If I took the pork tenderloin out of the freezer, then that. LOL! With mashed potatoes and a fresh veggie. I do have to make a chili this afternoon, so there is that too. Not a clue, can you tell? :)

By Trisa on Monday, January 12, 2004 - 01:46 pm:

We had poor mans lasagna. Very yummy stuff!
I am always trying new recipes. I to get sick of the same old same old.

By Colette on Monday, January 12, 2004 - 01:57 pm:

grilled pizza w/carmelized onions and sundried tomatoes.

Here's an awesome recipe for you:

Honey Chicken Stir-fry

1 lb boneless skinless chicken breast cut into 1 inch pieces
1 garlic clove
3 tsp olive oil
3 T honey
2 T soy sauce
1/8 tsp salt
1/8 tsp pepper
1 pkg. frozen broccoli stir fry veggies
2 tsp cornstarch
1 T cold water
Hot Cooked rice

In large non stick skillet or wok stir fry chicken and garlic in 2 tsp oil.
Add Honey, soy sauce, salt and pepper. Cook and stir until chicken is lightly browned and juices run clear. Remove and keep warm.
In same pan, stir fry veggies in remaining oil for 4-5 minutes or until heated through. Return chicken to the pan' mix well. Combine cornstarch and cold water until smooth;stir into chicken mixture. bring to a boil; cook and stir for 1 minute or until thickened. Serve over rice. Yield: 4 servings.

I got this from a Quick Cooking magazine. It's so delicious!

Pork chops, cooked vegetables and not sure what else but, my girls will probably say Chicken again! This is what they say every time I make somekind of meat. They even tell people all we ever have is chicken.

By Babysitbarb on Monday, January 12, 2004 - 03:07 pm:

Trisa, what is poorman's lasagna?

By Trisa on Monday, January 12, 2004 - 05:02 pm:

Its a easy and cheap recipe that taste like lasagna. I can post it under recipes if you like.

By Mommyathome on Monday, January 12, 2004 - 05:14 pm:

We are having Tator-Tot Casserole. Easy, and the kids eat it up!

How do you make pigs in a blanket with cabbage? Our pigs in a blanket are hot dogs wrapped in a crescent roll LOL

By Kernkate on Monday, January 12, 2004 - 05:40 pm:

Patti, that chicken sounds great I am going to try it!! Thanks:) I love any kind of chicken!!
Robin I'll put the recipe for our cabbage rolls (pigs in the blanket as we call them) on the recipe board....

By Kernkate on Monday, January 12, 2004 - 05:51 pm:

I posted it under Casseroles/One-Dish Meals.

By Babysitbarb on Monday, January 12, 2004 - 07:01 pm:

Thanks Trisa, I'll check it out.

By Vicki on Monday, January 12, 2004 - 07:26 pm:

I had library duty this afternoon and didn't put anything in the crock pot this morning, so we had hot dogs, french fries and corn. How is that for gourmet? LOL

By Trisa on Monday, January 12, 2004 - 07:54 pm:

Hey thats ok we do that to on a busy day!

By Andi on Monday, January 12, 2004 - 09:21 pm:

I've been cooking Chicken Breast and Cream Of Mushroom Soup in the Crockpot all day and we are going to have it served over egg noodles...yummy!

By Eve on Tuesday, January 13, 2004 - 08:23 am:

Collete, I would love the pizza recipe? What do you use for a sauce? :)

Patti-That chicken recipe looks good too!

By Tunnia on Tuesday, January 13, 2004 - 10:20 am:

We had spaghetti and yeast rolls brushed with fresh garlic and butter last night. Tonight it is vegetable venison stew and fresh baked bread. the stew is already in the crockpot and the bread mix is in the bread machine and the timer is set so I don't have to give dinner another thought until it's time to eat.:)

By Dawnk777 on Tuesday, January 13, 2004 - 06:30 pm:

Tonight we are having a small 3-lb ham that I put cloves into and pineapples all around. I like how the pineapples taste when they are baked. Easy enough to throw in the oven when I got home from work. Will cheat and make boxed mashed potatoes and heat up a frozen veggie.

By Marg on Tuesday, January 13, 2004 - 06:47 pm:

Tonight we had fried breaded rainbow trout, homemade mac & cheese and brocolli. I love trout! It's our favorite fish, however, it is too expensive to have on a regular basis.

By Mommyathome on Tuesday, January 13, 2004 - 06:59 pm:

Thanks Kathy!

By Colette on Tuesday, January 13, 2004 - 09:32 pm:

Eve, we just usually use pastene pizza sauce, but we make our own carmelized onions and next year I am making my own sundried tomatoes...

By Eve on Wednesday, January 14, 2004 - 08:08 am:

Sounds yummy, Colette! I love sun dried tomatoes!

By Kernkate on Wednesday, January 14, 2004 - 08:46 am:

I am now making for dinner tonight, a big pot of homemade chicken noodle soup!! Its going to be a good day for it with it being sooooo cold!

By Conni on Wednesday, January 14, 2004 - 09:05 am:

How do you make the grilled pizza?

We had leftovers Monday night~ chicken stir fry and homemade chicken pot pie were the main left overs. :)

Tuesday night we had pork chops, salad, bread, and potatoes.

Tonight we are either having grilled chicken salad or Chicken tacos...

By Debbie on Wednesday, January 14, 2004 - 11:59 am:

I am making chicken parmesan and speghetti with salad and french bread. Yum....I am getting hungry just thinking about it.

By Colette on Wednesday, January 14, 2004 - 01:54 pm:

you just roll the dough out, heat up the grill - make sure you spray well w/olive oil (the grill) so it doesnt stick. Cook the dough with nothing on it for about 5 minutes or so and then take it off, put the toppings on and put it back on the grill until it's done.

By Mommyathome on Wednesday, January 14, 2004 - 02:04 pm:

Debbie...we are having the EXACT same thing! LOL
With green salad too.

By Kolbysmom on Wednesday, January 14, 2004 - 02:09 pm:

We're having chicken of some kind. Not sure how though, maybe jerk chicken.

By Trisa on Wednesday, January 14, 2004 - 02:20 pm:

What is jerk chicken?

By Colette on Wednesday, January 14, 2004 - 02:29 pm:

Jerk seasoning is a very spicy jamicain dish. I love jerk chicken or jerk pork.

we (dh and I - not the kids, they are having chicken) are having crab cakes tonight, on salad w/chipolte tartar sauce.

By Colette on Wednesday, January 14, 2004 - 02:30 pm:

I mean jamaican. sorry for the spelling error,it's to cold to type correctly.

By Marg on Wednesday, January 14, 2004 - 02:31 pm:

We are having stuffed shells and garlic bread, cheesecake for snack later on:)
