Enchiladas and a green salad. The enchiladas are so easy to put together so I'm taking it easy tonight.

Dh and I are going out I think (hope), so either that or turkey burgers on the grill. Kids don't have school tomorrow. Oldest dd made pad thai, ds went out with some friends and youngest dd is spending the night at a friends.

Well, I usually like this thread when I am making something but tonight it's leftovers.
The kids have their choice of pizza, chicken florentine or rice and kielbasa. I did, however, make a fresh salad

We are eating taco mac

Which is mac and cheese, mixed with monday nights taco meat. Serving that and a green salad.

Last night we had fresh gulf shrimp, yum yum.

I do it very often! I don't cook many nights, but when I do I always cook double the meat and figure out meal two.

I'm a little late on this one, but we had Greek lemon chicken with roasted new potatoes and Greek salad.

Tonight we will have fajitas, black bean soup, and Mexican rice unless I can talk dh into taking me out.
