I haven't encountered this before so I'm not sure how I would do it. I have an auction that I just listed a few hours ago. Someone emailed and asked me how much it would take to end the auction early because this person will be at work when it is set to end. I have a price in mind, but how do you go about doing this if in fact the person agrees to the price and bids it?

I would relist it with a buy-it-now option.

Okay - thank you! Just email this person with my price. If they agree to it, re-list it as a buy-it-now?

Yeah. I would rather list it as a buy-it-now, because I think you would still have the buyer protections from Ebay. If you just go under the table and sell it to this person, you are on your own.
