I love asking this to all you ladies because I get so many new ideas:)
We are having stuffed chicken breast with gravy, mashed potatoes, and green beans.
I had today off of work so I actually have time for a good dinner:)

Homemade chicken veggie soup and homemade bread! The little ones are sick sooooooooo good mommy here is making homemade soup :)

soup...our local grocery has the best "homemade" soups. I will make some bread to go with it. Very casual tonight!

Chinese chicken salads with warm gingerbread with cool whip for dessert. Gingerbread is baking right now and smells yummy!

I did a new twist on goulash tonight. I like it, but dh says it would take some getting used to.

I call it "Goulash Italian Style."

1- 16 ounce tube Bob Evans Italian Syle Roll Sausage, browned
2 cups rotini style pasta, cooked
2- 15 ounce cans pizza sauce, 1 can water
1- 15 ounce can diced tomatoes
1- 4 ounce can mushrooms stems and pieces
1 teaspoon minced garlic
3/4 cup diced onion
8 oz chunk Mozzerella cheese, shredded

Brown Italian sausage with onion, drain if necessary

Cook rotini pasta, drain

Combine remaining ingredients in pot and simmer 10 min.

Serve with Mozzarella cheese on side (so that individuals can add to liking), including grated parmesan cheese and garlic or cheese toast, bread, or bread sticks.

When you think of what's on a pizza, you could add any ingredients you would normally eat on a pizza. I thought about getting some pepperoni, but didn't. You could also use penne pasta, or whatever you think would be fun.

The boys had left over speghetti and meatballs. I had a lean cuisine. Definitley nothing excititng.

Kathy- LOL! We had the cheeseburger mac tonight, my dh's favorite. I'll only let him have it once in a while because it's soooooo fattening (for all of us!) and not heart healthy!
Have you tried the cheesy chicken enchilada? It is VERY good and a tad healthier!

Pot roast with celery, carrots and pots with homemade frenchbread rolls.
Dd had softball practice so I used the crockpot and dh only had to put the rolls in the oven.
