Sweet Potato casserole recipe?

Moms View Message Board: General Discussion Archive: Archive November 2005: Sweet Potato casserole recipe?
By Eve on Tuesday, November 22, 2005 - 11:02 am:

I posted over on the recipe board, but it's not getting any attention. I'm cheating and using the canned sweet potatoes. I printed out one recipe that says just to add brown sugar and butter and then top at the last minute with the marshmallows. In the past when I have made them, I've had to add milk or something....

Does anyone have a tried and true easy recipe?

Eve I have a receipe that I have used for the last several years, but probably more work then you are looking for. But, Ill post it anyways.

Burbanks Sweet Potatoe Casserole(From Compkat.com)

3 cups cooked Mashed Sweet potatoes
1/2 c white sugar
2 eggs beaten
1/2 t salt
1/2 stick margarine melted
1/2 c raisins (optional)
1/2 c milk
1 1/2 t vanilla
1/2 c light brown sugar
1/2 c flour
1 cup chopped nuts
1/3 stick margine

Mix first 8 ingredients together and place in 9x9 glass pan. Mix remaining ingredients and spread on top of potato mixture. Bake at 350 fo 15 minutes,or until heated through.

This is so YUMMY, tastes like a dessert. I just peeled the Sweet pototes today and have them all ready for boiling on Thursday,

Eve,
I have made these for the last four years and they are always a favorite. There is never any left, really good!
4 1/2 cups cooked and mashed sweet potatoes
1/2 cup butter, melted
1/3 cup milk
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs, beaten
1 cup light brown sugar
1/2 cup all-purpose flour
1/3 cup butter
1 cup chopped pecans

--------------------------------------------------------------------------------

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
Bake for 25 minutes in the preheated oven, or until golden brown

I sometimes buy the candied Pecans, instead of regular....
They are excellent!

I hope I'm not too late! I have the BEST recipe. It's so yummy I could eat the whole thing!

Sweet Potatoe Casserole:

3 cups sweet potatoes, drained & mashed (I definitely use the canned ones!)

1 cup butter or margarine

1/2 cup sugar

1 teaspoon vanilla

2 eggs

Mix all the above together. Add 1/2 cup slivered almonds.

Topping:
1/2 cup brown sugar
2 tablespoons flour
3 tablespoons butter
slivered almonds

Mix topping and spread on top. Bake at 350 for 30 minutes.

I usually double the recipe for a crowd. Fits nicely in a 9x13 baking dish when doubled. I go heavy on the toppings, because it's so GOOD!
