Has to be quick and easy though. I hate to cook but do love to bake! Need to creat a healthy balance here as kids cant live on granola alone!! THANKS

What kind of foods do they like? Are they adventurous eaters? or do they like comfort type food? I have a lot of recipes, making vegetarian pad thai tonight, so let me know the types of food they like.

Thanks for the response. O.k. likely more comfort. Beans, oatmeal, even chicken will do. I just want healthy easy meals. Like your chicken wrap thingy you posted.....maybe bean burritos or something like that haha I feel at a loss here for description....We are trying not to consume too much store bought crap, just too many additives etc...not to mention the expense. I make granola and wh. wh. breads etc...cookies.......kids like yogurt apples & cin.& vanilla we find that is a good treat..anything that tastes good. Healthy easy to prepare dinner recipes are either to time consuming to prepare or hard to find even on the web. I really don't like to cook, can you tell haha. Maybe I don't have much of a choice? Thanks
P.s. anything in a wrap. spicy is good too.

This is one of our favorite. I use canned beans but you could use dried if you soaked them (I think)

chicken breasts or tenders (enough for your family)
one can rotel tomatoes
one can black beans rinses and drained
about a cup of rice
one cup of water

put all into a crock pot and cook all day or put into a casserole dish and bake at 350 for one hour

Well, here is my daughters favorite veggie dish. She, however, loves a huge variety of food, so it may not work for you. However, with all the cheese in the dish, you might pull the wool over their eyes LOL.

Zuchinni Quiche


2 large zuchinnis (thinnly sliced!)
1 onion (thinnly sliced)
2 garlic cloves (or garlic powder as you like)
about 1 tbs butter
hand full of chashews
4 eggs
about 1/3-1/2 cup milk
alot of shredded cheese (one white and one yellow--I use cheddar and montery jack)
Pilsbury crescent rolls.


First saute zuchinni, onion and garlic (for me the more garlic the better). Set aside to cool.

While cooling, remove the crescent rolls one at a time and press into a quiche or pie pan (I like the larger quiche size best). Press until the pan is completely lined w/ no holes and up the edges. The first time you do this, you wonder how in the world do you make it fit the whole pan, but just keep pressing it out and pinching the seams. Place some nuts in the bottom of the crust.

In bowl, beat eggs until well blended. Add in half the cheese and stir. Add the veggies. If they are not cooled they will start cooking the eggs and melting cheese. Not a problem, but it does make it harder to stir. Add most of the nuts to mix. Pour complete mixture into pie pan. If I am using salted nuts, I do not add salt. I add the salt when I eat if I need it.

Once mix is in pan, top with the remaining cheese and some more nuts. I really never measure this stuff, I just add as much as I think looks tasty. But w/ kids the cheesier it looks the better it looks :). Bake in oven at whatever temp the crescent roll package says. It will take about 30 minutes or so. I like my cheese toasty brown and the egg is solid in the middle. No wettness from egg. You might see some wettness due to veggies, but egg is thoroughly cooked. Slice like pie and serve. DD and I like it so much we eat it again the next morning for breakfast!!!! YUMMMMMMMMMMMMMm

That makes me feel so good! We love this dish at our house, esp DD. How'd you kids like it? Was it a hit?

Also, I use other veggies for a change. I substitue the zuchinni w/ brocolli or spinache. Either way it always tastes good. It's the nuts!

Dana, believe it or not my 7 yr old will only eat cheddar cheese on pizza! He will eat other vegs if they are in something fast food but not at home. No, he didn't like the Quiche but my older boy did. I'm at a loss what to feed my ds. It's ridiculous really. Yeah, the nuts are yummy in the Quiche, never had that before.
