  BRUSCHETTA 
 6 large slices of good quality Italian bread, toasted
 1 clove of peeled garlic
 About 3/4 cup very thinly sliced mushrooms or chopped fresh tomatoes, or roasted eggplant Slices or a mixture of all
 Extra virgin olive oil
 Salt and freshly ground black pepper
 1 T. fresh oregano
 1 T. fresh sweet basil
 1 T. fresh chopped parsley
 
 Right after toasting, rub the bread with garlic and cover it with mushrooms--tomatoes---eggplant etc. Drizzle with oil, season with salt and pepper and garnish with parsley, oregano and basil.
