MINESTRONE DI MILANO

3 T. cooking oil
¼ lb. Italian style sweet sausage
¼ lb. ground beef
1 c. onions chopped
1 c. green bell pepper chopped
1 c. red bell pepper chopped
1 ½ c. celery chopped
5 cloves of garlic minced
1 lg. can tomato paste
2 cans beef broth reconstituted
5 c. water
1 c. dry red wine
2 c. green beans cut
2 c. broccoli chopped
2 c. cauliflower chopped
1 c. cabbage sliced
2 c. carrots sliced
½ c. sliced mushrooms
3 T. dry oregano or 3/4 c. fresh
3 T. dry sweet basil or 3/4 c. fresh
¼ c. dry chopped parsley or 1/2 c. fresh
2 tsp. salt
1 T. fresh ground pepper
3 c. small shell pasta

NOTE: This can be made with canned or frozen vegetables also.

In a large dutch oven, brown crumbled sausage meat and ground beef well in hot oil. Drain off the fat, reserving 2 T. Remove the meat. Save. Over medium heat, saute onion, celery, peppers and garlic in reserved meat drippings. Return meat to pot and stir in tomato paste. Slowly add broth, wine and water, mixing until paste is dissolved. Add spices and vegetables. Stir until blended. Cover and simmer 2 hours over low heat. Add pasta. Cover and simmer ½ hour more. Add more water if you need more broth. Serve with a sprinkle of grated parmesan cheese on top.
