ITALIAN CREAM CAKE
 
  ITALIAN CREAM CAKE 
 Cream together....
 1 stick margarine
 ½ c. Crisco
 2 c. sugar
 Separate 5 eggs.
 Reserve whites.
 Add yolks to mixture.
 With mixer on low beat in:
 1 tsp. baking soda
 1 c. buttermilk
 1 tsp. vanilla
 Beat egg whites on high until stiff.
 Fold into mixture.
 Pour into 3 greased and floured 8-9 inch cake pans
 Bake at 350 F for 25 minutes.
 Remove from pan and cool thoroughly before frosting.
 
 FROSTING
 
 1 8 oz. pkg. cream cheese
 1 tsp. vanilla extract
 ½ stick butter or margarine
 ¾ c. coconut (optional)
 1 box plus 1 c. confectioner's sugar
 ½ c. chopped pecans (optional)
 
 Beat together first four ingredients until smooth.  Spread between layers and on top.  Sprinkle nuts and coconut between layers and on top also if so desired.
