HAM STUFFED MANICOTTI WITH CHEESE SAUCE

8 manicotti shells
3 T. butter or margarine
¼ c. chopped onion
3 c. ground cooked ham
2 T. cooking oil
¼ c. green pepper chopped
1 c. chopped mushrooms
½ c. shredded swiss cheese
3 T. Parmesan cheese
3 T. flour
2 c. milk
1 T. paprika


Cook manicotti in salted boiling water for 15 - 20 minutes or until tender. Drain. Rinse with cold water and drain again. In a small skillet, cook onion in oil until tender; add ham and mushrooms. Allow to cool. Stir in parmesan. Set aside. In a small sauce pan, cook green pepper in butter or margarine until tender. In a separate bowl, blend milk and flour until smooth. Add to peppers. Cook over medium heat, stirring until thickened and bubbling. Stir in swiss cheese until well blended. Mix ¼ cheese sauce with ham and mushroom mixture. Fill each tube with about 1/3 c. of ham filling. Arrange tubes in a greased baking dish. Pour remaining cheese sauce over tubes. Sprinkle with paprika. Cover and bake at 350 for 30 - 40 minutes. Serves 4
