STUFFED GREEN PEPPERS

6 large green peppers
1 pound ground beef
1 small onion, chopped
1 can (15 ounces) tomato sauce, divided
1 cup cooked rice
1 teaspoon salt
1/8 teaspoon garlic powder
1 cup (4 ounces) shredded cheddar cheese


Cut tops off peppers; remove seeds and membranes. Cook peppers in boiling salted water for 5 minutes; invert on paper towels to drain. In a skillet over medium heat, cook beef and onion until meat is no longer pink; drain. Stir in 1 cup tomato sauce, rice, salt and garlic powder; heat through. Lightly stuff each pepper with about 1/2 cup meat mixture. Place peppers in a shallow baking dish. Spoon remaining meat mixture around peppers. Pour remaining tomato sauce over all. Bake at 325° for 45 minutes. Sprinkle with cheese. Bake 15 minutes longer or until the cheese is melted. Yield: 6 servings.
