Barbecue Beef

I need to try this soon. It sounds sooo good.

Barbecue Beef

3-lb boneless chuck roast
1-cup barbecue sauce
1/2 cup apricot preserves
1/3 cup chopped green peppers
1 small onion, chopped
1 tsbp Dijon mustard
2 tsp brown sugar
12 sandwich rolls

Cut roast into quarters. Place into greased slow-cooker.

Combine barbecue sauce, apricot preserves, green pepper, onion, mustard and brown sugar. Pour over roast.

Cover. Cook on low 6-8 hours.

Remove roast and slice thinly. Return to slow cooker; stir gently.

Cover. Cook for 20-30 minutes.

Serve beef and sauce on rolls.

Makes 12 servings.

Have you actually made it? It is on my list. I'm just excited that I get to take more chicken barbecue for my supper at work tonight, instead of a normal cold sandwich, which I'm getting rather sick of. Also, my kids will have leftovers for themselves to eat, while I'm working tonight.

yes, of cousre I always follw th tecipe the first time & then add my own touches later. My dh really enjoyed it. I also cooked it over night the last time & shredded the meat.
