I have the Pampered Chef one. I just use the recipes that came with it. Make sure the dough is cold and the cookie sheet is cool specially if its a stone or it won't work right.

I have a great recipe:

1 cup butter, softened
1/2 cup sugar
2-1/4 cups Flour (do not use self rising flour)
1/2 tsp salt
1 egg
1 tsp vanilla extract

Heat oven to 400. Cream butter and sugar. Blend in remaining ingrediants. Fill cookie press, form desired shapes on ungreased baking sheet. Bake 6-9 minutes, until set not brown. My kids usually decorate them with sprinkles before I bake them. Makes about 5 dozen cookies.

And yes, make sure the dough is cold, and the baking sheet is cool.
