Moms View Message Board: General Discussion: Whats for dinner tonight?
By Pandamamaoo4 on Tuesday, March 2, 2010 - 01:47 pm:

I took out hamburger this morning..MMMM I'm thinking about keeping it real simple. I think I'll make a salad and then we'll have Hamburger Helper. What could be more simpler.

By Mommy3girls on Tuesday, March 2, 2010 - 02:10 pm:

I am with you there! I thought ahead too. Took out a roast last night and popped that baby into the crockpot this morning with some potatoes, baby carrots and a packet of Lipton Beef soup mix. It's been on Low since 8 am and the house is smelling DELICIOUS :) YUMMY

I'm making broccoli and mushroom quiche. Dh won't be home for dinner so the boys and I can enjoy it. Also a side salad and I'm sure the boys will ask for dessert-green grapes.

By Feona on Tuesday, March 2, 2010 - 10:26 pm:

Chicken and potatos wedges and left over brisket and carrots.

Pea soup for me. I didn't cook any of it. All of it was from the Deli.

By Mommy3girls on Wednesday, March 3, 2010 - 08:18 am:

DH IS MAKING STEAK ON THE GRILL WITH STEAK RUB SEASONING AND TWICE BAKED POTATOES. They sell these seasoning packets at the grocery store that you mix with the potatoes & they taste SOO GOOD! & then cottage cheese & applesauce on the side. Easy Peesy :)

By Mommy3girls on Thursday, March 4, 2010 - 11:50 am:

I found this recipe in an Old recipe thread and decided to try it but I made it with boneless breast instead and tweaked it a little. I sliced a 1/2 a lemon and put that on the bottom of the crock pot then put the chicken on top of the slices then poured the honey and orange juice over top of the chicken then I sliced up an orange and put the slices of orange along the side between the chicken and the crock pot....I will let you know in 5 hours how it turns out! :)
I will serve with some rice and broccoli.

Lemon Honey Chicken

1 lemon
1 whole roasting chicken, rinsed
1/2 cup orange juice
1/2 cup honey

1. Pierce lemon with fork. Place in chicken cavity. Place chicken in slow cooker.

2. Combine orange juice and honey. Pour over chicken.

3. Cover. Cook on Low 8 hrs.. Remove lemon and squeeze over chicken.

4. Carve chicken and serve.

VERY easy to make and delicious!

Taken from Fix It and Forget It page 181.

mommy3girls ... how did that boneless recipe come out ?
I'm a vegetarian, but I cook meat for my family, however, I have a VERY hard time with bones, so I try to avoid recipes that have them. That being said, a very funny story exists about me having to make soup for m-i-l the day after THanksgiving last year which involved having to break the bones of the extra turkey carcas to stuff them into the roasting pan (her words). When she gave me THOSE instructions, from the hospital no less, which is why I was having to do this instead of her ... well then I yelled for hubby to come help out ..... which might explain a bit about why I'm VERY interested in your boneless method ..... I usually cook the tenderloins in the pan or maybe in the oven, but I've never tried the crock pot. Sounds like it would be good (you know, for those who eat that kind of stuff, hahaha !!!)

By Feona on Friday, March 5, 2010 - 07:56 am:

I think Pizza tonight. Notice I spend 10 minutes on dinner every night..... and Fruit for dessert...

By Mommy3girls on Friday, March 5, 2010 - 09:38 am:

Harlena - It turned out really good - but believe it or not - my youngest daughter thought it was too "Sweet" - isn't that crazy? I thought it was very tasty. It was very tender and didn't crumble apart but came apart easily. I think it would have been perfect for Chicken noodle soup. :)

Pizza tonight sounds PERFECT! I have the ingredients and it's quick and easy! Great idea Feona!

By Enchens on Friday, March 5, 2010 - 03:58 pm:

Shrimp fajitas tonight. I'm going to add cilantro as an experiment.

Recipe for Porcupine Meatballs. I have been eating these since I was a child. Children just love the name Porcupine Meatballs. Using a fun name is a great trick to get the littlest ones to eat something new or even eat at all.

By Mommy3girls on Monday, March 15, 2010 - 10:56 am:

I took out hamburg from the freezer and will chop up some potato wedges to bake some country "french fried" potatoes....Maybe a can of corn...

Don't know what I'm going to do with the hamburg yet! LOL Any ideas? I was thinking Goulash...but that does NOT go with potatoes & corn! LOL

NOW WHAT???!!! I'm in Brain freeze mode!

By ~harlena on Tuesday, March 16, 2010 - 07:51 am:

OK .... I was scrolling through .... looking for something to jumpstart my brain .... meatloaf was mentioned, I MIGHT have one in the freezer (I have started to make two instead of one at a time, that way SOMETHING is already done in the freezer, just have to take it out and warm it, but the "fixing" is already done ..... that might work!)

OK, meatloaf:
I make the one that uses stuffing in the mix, and I marinate the meat prior to cooking it in Lowry's Steak and Chop sauce-stuff (whatever it's called!)
add a cup of hot water to the stuffing, let stand for awhile
mix stuffing and meat together with an egg
put it into the casserole dish
pour some more of the marinade-stuff over the top instead of ketchup
cook .....

Even people who do NOT like meatloaf (my kids, my hubby!) LOVE this meatloaf !

THANK YOU MOMSVIEW for an idea, I have dinner planned and it's not even 8am, how awesome is that !

By Northcountrymom on Sunday, March 28, 2010 - 04:21 pm:

I haven't been posting here because I've been on the run so much that I am cooking in batches and freezing or storing for the week with added salad and veggies. But this week I realized I use something that can be added to any veggie to make it tastier. I add fire roasted canned tomatoes with Italian spices to almost any green veggie - instant upgrade - especially if your family likes stewed zucchini or green beans etc. Microwave them together with a little added garlic and salt and you're good to go. If "hot" is OK I like to add the canned diced tomatoes and green chilies - instant flavor - cook, microwave, saute with virtually any vegetable - always tasty.

By Enchens on Sunday, March 28, 2010 - 08:59 pm:

BBQed spareribs, garlic mashed potatoes, steamed asparagus, and a quick corn and lettuce salad.

Cheesecake Factory!!! $80 for me & my 2 Youngest DD's. What is wrong with this picture???

WAAAAAY too expensive! Good thing we dont do it often.

By Enchens on Friday, April 16, 2010 - 10:29 pm:

I'm thinking cereal. Is that terrible?

By Feona on Saturday, April 17, 2010 - 10:50 am:

No, sounds so easy. Low in calories and I bet full of vitamins.

I love Cheesecake Factory!

I pack the 2 refrigerators with takeout. It is my one real time saver.

I cook like 8 pork chops or whatever at a time in case I don't want to cook. Or 4 boxes of mac and cheese. It works out good!

By Mommy3girls on Saturday, April 17, 2010 - 12:05 pm:

Thats a great idea Feona! My family is not good with leftovers - eat a meal once & then lose taste for it for a month! But If I packed it up & froze it -= how handy would that be??!! LOL

By Mommy3girls on Tuesday, May 18, 2010 - 07:49 am:

I just put a pot roast in the crock pot and will slice it up thin & make gravy for hot roast beef on bread tonight with some steamed veggies & french fries. Just cant wait for about 1 this afternoon to start smelling the goodness! :)

By Enchens on Tuesday, May 18, 2010 - 01:42 pm:

Some sort of chicken soup or lasagna. It's awfully cold here.
