I am having an Easter brunch (15 people)I want to bake some mini muffins.And want to know if I bake them today could I freeze them and take them out sat.? Will they be still be okay? or should I wait?I just have so much other cooking to do that I wanted to get a little ahead of the game. TIA Brooke

Muffins are fine when defrosted! Make sure you put them in something nice and air tight and you should be fine!

I do it all the time! Especially when I bake large amounts or if I go to someplace like Costco and get muffins or breads! The breads come in packs of three loaves of different flavors. We freeze two and they defrost just like fresh!
