We had spaghetti with meat sauce and garlic bread. My favorite! :) Tomorrow night it's pot roast, potatoes, mac, and dinner rolls.

Dh and I are both dieting, so tonight I baked chicken breasts. I took dd's and made her chicken noodle soup out of it, dh had a baked chicken salad and I had my chicken breast along with a veggie lean cuisine!

We had Subway tonight. Last night I threw thinly sliced steaks with crushed tomatoes, spices and beef broth into crockpot, served with yellow rice and broccoli.
Tomorrow we are having burgers on the grill.

Speedy Chicken Stir Fry

This was so easy and so yummy. We put in broccoli, carrots, green pepper and snow peas. We also used wholewheat/spinach pasta, too. Was a hit with the three of us, but I'm sure Sarah would have liked it, too.

Pam - Would you share your recipe for the chicken enchilada soup? Sounds yummy. :) I don't have anything Mexican on the menu this week, which is unusual, and I want to try something new for next week!

I just printed out Pam & Dawn's recipes. Looks good to me.

I picked up barbeque @ Hillbilly Barbeque, which is on my way home from work. I mention the name of the place because it was in the top barbeque places on the Food Network or The Travel Channel, or one of those shows where they eat 3 meals a day for a certain dollar amount, where they name top places to eat nationwide.

I have passed by this place for 28 years going to and from work. It looks like a dive, but people rave about the barbeque. Just a very old, small BBQ place with something like only 3 tables if you want to eat there. We sometimes go to/pick up BBQ from Voodoo Barbeque, which is good. But between the mention on TV and then a couple of references from people who have eaten there recently, I decided to try it.

Hands down, the best BBQ we've had, at least in this area. We had BBQ in Memphis when we were evacuated in 2005, but locally, Hillbilly BBQ is VERY tasty! So much so, that I'm tempted to pick it up for tonight as well, since Friday nights, I don't usually cook! They sell the BBQ by the pound, either shredded or chopped, and the sauce is great - a little sweet and pretty spicy at the same time.
