How early can I make up a meatloaf to refrigerate?

I don't want to freeze it - it's for Christmas dinner. How early can I make it up and refrigerate it? Can I do it today? TIA:)

Go by the sell by or use by date. If that date falls after Christmas then it makes no difference if the meat sits in your fridge in its original packaging, or mixed into a meatloaf.

I like to use or freeze the ground beef, by 48 hours, after I've bought it. So, if you bought the ground beef today and made it today, I think you'd still be good by Tuesday.

Thank you! The use by date is today. I was hoping to make it up today if possible, to cook Christmas night, but I'll just stick it in the freezer and defrost before making it. I never like it when I make it all up and THEN freeze, for some reason. I don't think it tastes as good, but it's probably just me.
