Chili and grilled cheese sandwiches

Does anyone have any good chili recipes? Would a grilled cheese sandwich go well with chili? What do you all eat with chili? How do you all fix your grilled cheese sandwiches?

I remembering fixing some by toasting the bread in a toaster then putting the cheese on the bread and putting in the microwave for a few seconds to melt the cheese. I've never tried it in the oven. I know my SIL fixed them in the oven one time and she burnt the cheese and had to remake them. I need to know how to fix these where they will turn out okay because I won't have time to fix more if they don't turn out. I will be cutting the crust off of the bread (I don't like the crust) and cutting the sandwiches into triangles. There will be five adults and a small child. How many sandwiches should I fix since they will be cut into triangles?

Would it be best if I fix these right before I plan on serving them. The problem is I will be having a few people over right after church and I would like to have these made when they get here. Which I'll be leaving church before they do, so I may have a little time to fix them. But if I make them that morning before church then wouldn't the bread be hard and the sandwiches will be cold. I couldn't warm them up in the microwave, could I?

But I'm going to see if they like pimento cheese sandwiches and if they'd like some of them instead of the grilled cheese. That way I can fix them that morning and put them in the refrigerator.

For grilled cheese sandwiches you melt a little butter on a griddle or in a skillet, dip both pieces of bread in it, put one piece of bread butter side down, cheese on top, and then the other piece of bread butter side up. Cook on medium until cheese is starting to melt and then flip with a spatula. Cook on the other side until golden brown. I would not cook them until you are ready to serve. Cold or reheated grilled cheese sandwiches are not good at all IMHO. I'd make at least 6 sandwiches and maybe leave the crusts on. Personally, that's my favorite part.

And yes, grilled cheese goes great with chili. We also make chili pie with fritos and cheese. Instead of grilled cheese you could also do cheese toast in which you could do a lot at one time. Just put cheese on bread and bake (not broil) at 350 for 5-10 minutes.

Ditto Pamt - goes great with chili! I've always spread butter on one side of each piece of bread though, and then put it on griddle bread side down. :) I'm not a big fan of crust in general, but I do love grilled cheese crust!!

Another vote for cold grilled cheese don't really work.

I eat my chili with rice. I just cook plain white rice and add chili, and cheese.

Also for the right type of chili, you can eat over spaghetti noodles, add onions and cheese.

Or simply hotdogs. Yummm I need to make chili!

Grilled cheese:
Butter outside edges of bread. Place one slice on griddle butter-side down, add cheese, cover with other bread slice, butter-side up. Cook on each side until golden brown.

Dawn's Chili

1 pound ground beef
3 stalks of celery, diced
1 onion, diced
1 can Campbell's tomato soup
2 16 oz. cans tomatoes
2 cans kidney beans
3 tablespoons chili powder
2 tsp oregano
1 tsp paprika
1/2 tsp pepper
1 cup uncooked macaroni, cooked

Brown ground beef, onions and celery. Add tomato soup, tomatoes, kidney beans, chili powder, oregano, paprika, pepper; heat to boil. Turn down heat and simmer for 45 minutes. About halfway through the simmering time, cook the macaroni. Add macaroni after it's cooked.

Definitely best fixed right before eating! They get soggy, when they sit. My women's group makes grilled cheese sandwiches on soup/sandwich nights, during Lent. They cook them right then and there. Yummy. They are immensely popular.

Leave your butter out to soften while you're at church so when you get home it will be soft and ready to spread. If you have an electric frying pain or a large griddle, you can cook several very quickly. And this may be dumb, but I have found over the years that I like grilled cheese sandwiches so much better that are made with the cheap thin bread like the 99 cent loaves. And bread that is several days old but not stale. Not sure what it is, but seems like when fresh soft bread, it's not as good. Maybe the butter soaks into the thin older bread. Don't know. But I make a point of buying the cheap bread if I know I'm gonna make grilled cheese.

Butter one side and place in pan or on griddle butter side down. Place cheese on up side. When bread is toasty on the butter side, put the two pieces together.

I also like homemade pimiento cheese sandwiches with chili.

Thanks for the suggestions. I'm going to go with the pimento sandwiches if they all like them. That way I won't have to do anything before they get there.

I'm also going to be offering fritos and cheese to put in their chili. I'm going to be making the chili in a crockpot. How long does it take to cook chili in a crockpot? I'd put it all together the night before, then put it in the refrigerator. Then when I get up the next morning, I'd put it in and turn it on. That would be around 6a.m. and I'd be home from church around 12:30. I figured we'd eat around 1p.m.

4 hours on high. 6-8 hours on low.

Sour cream goes great with the chili, cheese, and fritos, too.

I love this recipe for chili and it is super easy.
1 lb. ground beef
1 packet dry ranch dressing mix
1 packet taco seasoning
1 can pinto beans
1 can black beans
1 can northern beans
1 can chopped tomatoes w/ or w/out green chilis
1 can corn drained

(This can all be done in a large pot)
brown the meat and add the dressing mix and taco seasoning. Add the rest of the cans. Save the corn for the end if you like it crispy. It is ready when it is heated throughout.

This is great served with shredded chedar cheese, fritos and sour cream; corn bread muffins are easy too. I just make them from a mix you find by on the cake mix isle.

You could mix this all up the night before and then put it in the crock pot before church. It will smell all yummy when you get home. I wouldn't worry about sandwhiches the chili makes a great meal. Of course that is up to you. Hope you have a fun lunch. You've inspired me, now I'm ready for chili.
