Best Cheese sauce EVER!

Moms View Message Board: Cooking and Recipe Discussion: Other: Best Cheese sauce EVER!

This is the recipe that I was taught by my mom, taught by her mom. It is so fast and easy I thought I'd share it.

WHITE SAUCE (good on cooked carrots)

2 tbs real butter
2 tbs flour
1 cup can milk
salt/pepper to taste

Heat butter. Add flour and stir til smooth. Slowly ad in milk (canned milk is much tastier than regular milk). Stir over low heat until thick. Serve over veggies

CHEESE SAUCE

Follow the white sauce instructions exactly, except salt. Then after stiring in milk, add pieces of processed american cheese (do not use "real cheese" like cheddar) I prefer Kraft Delux only.

I use about 5 slices of Kraft cheese. I tear them into fours, and add cheese a little at a time until I like the color and taste. IF salt is needed, I do that last. The cheese is very salty and you may not need aditional salt.

I like this sauce served over steamed brocolli, califlower, and last night we mixed in the extra sauce from the brocolli over our buttered noodles. YUMM.

Hope you can use this during your holiday cooking or just to add some yumm to a regular dinner.

I make a white sauce similar to the one you gave, and add garlic powder and parsley. I serve it over spiral noodles. The tri-color ones look best. I cut up chicken, and brown it in the frying pan, and serve it over the pasta. You can add veggies, too.

For the cheese sauce, try adding a bit of Worcestershire sauce and onion powder, just a touch. It will enhance the flavor so much!
I make a similar cheese sauce and serve it over french bread or toast. When served this way it can be called Welsh Rabit. As a child I always called it "Rabbit Toast". The name has stuck....I now make rabbit toast for my kids.
I also use a similar recipe for fondue.

YUMM! Thanks for the variations. Can't wait to try it.

So THAT's what Welsh Rabit is! Never knew that. I always thought it must be a rabit stew. :)
