I found this for Natalie and I to make together. I wanted something easy that she could do without much help.

Easter Bird Nests
Need: round shortcakes, white icing, green food coloring, shredded coconut, small jelly beans

Fill shortcakes with icing, then layer on coconut that has been dyed green with the food coloring, then lay some jelly beans in the top for the bird eggs.

*Variation: We didn't use the coconut because no one likes it. Instead we just colored the icing green and used the icing as the grass in the nest.

Awwww. I don't mind coconut, but Emily doesn't like it, at all. The variation sounds like a great idea. You probably could texture the icing, with a fork, to make it look more grass-like.
