Moms View Message Board: Cooking and Recipe Discussion: Salads, Dressings, Sandwiches, Cold Food: Crunchy Salad
By Tunnia on Wednesday, June 26, 2002 - 03:56 pm:

1 head red leaf lettuce
1 head romain lettuce
1 bunch green onions
1 cup chinese rice noodles
10 slices bacon
1 cup croutons
5 Tbs sesame seeds
1 cup slivered almonds

Tear lettuce into bite size pieces, rinse and spin dry in a salad spinner. Chop the green onions. Fry bacon until crispy and crumble into bits. Toast sesame seed and almond slivers. In a very large bowl, toss together the lettuce, onions, bacon bits, sesame seed, almonds, croutons, and chinese rice noodles. Pour the dressing over the salad and serve immediately.

Dressing:
1/3 cup red wine vinegar
6 Tbs sugar
1/2 cup olive oil
1/4 tsp black pepper
1 tsp salt

Combine all the dressing ingredients and mix well until all the sugar is disolved.

Serves 8

Is this the salad that has what appears to be Ramen noodles in it???

I had a salad the other day at a luncheon that sounds similar to your recipe. It was wonderful and I am wanting to make it.

I have never purchased chinese rice noodles. What are they and what do they look like. The salad I ate, appeared to have ramen noodles in it???

Thanks for your help.

This sounds delicious. We often entertain with salad luncheons in the summer. I'm saving this recipe to try then. Thanks.
