PATRIOTIC TRIFLE

makes two

1 large angel food cake
½ lb. fresh strawberries, pitted cherries or raspberries
½ lb blueberries
½ pint whipping cream
½ c. sugar
1 tsp. vanilla
1 large. or 2 small pkgs.
cooked vanilla pudding
2 eggs, beaten
¼ c. cream sherry


Make pudding according to package directions, but add well beaten eggs before cooking. Set aside to cool. Mix cream sugar and vanilla, in a totally clean metal or glass bowl. Whip at highest speed for at least 5 min. until light and fluffy. Divide cake into 4 equal parts. Break up one portion of cake into the bottom of a large straight sided glass bowl. Sprinkle with ¼ of the sherry. Spread 1/4 pudding on the cake. Reserve a few of both types of berries for garnish. Arrange ½ of the blueberries on the pudding. Crumble second portion of the cake over the pudding. Sprinkle with ¼ of the sherry. Spread 1/4 of the pudding over the cake. Arrange ½ of the stawberries, pitted cherries or raspberries on the pudding. Spread ½ the whipped cream on top. Garnish with reserved berries. Repeat into another bowl. Chill for a hour before serving.
