Golf Ball Cookies

1 c crunchy peanut butter
2 sticks margarine, melted
2 tsp. vanilla
1 box confectioners sugar
½ c pecans, chopped 1 c flaked coconut
2 ½ c graham cracker crumbs
semi sweet baking chocolate squares, melted


Mix all ingredients except chocolate well. Roll into bite sized balls. Chill thoroughly. Melt chocolate in double boiler or microwave. Dip balls into chocolate and chill. Store in airtight container.


Pineapple Casserole

1 15 ¼ oz. can pineapple tidbits
½ c brown sugar
1 c sharp cheese, shredded
3 Tbsp. flour
¾ stick butter, melted
12 Ritz Crackers, crumbled


Drain pineapple well. Place in bottom of a 1 ½ quart casserole. Mix sugar, cheese and flour. Spread over pineapple. Drizzle melted butter over cheese mixture and top with cracker crumbs. Bake in preheated oven at 350 F for 10 to 15 minutes. Serve immediately. Wonderful with ham or pork dishes.


Spiced Apple Crisp

4 medium (7 oz. each) Macintosh apples
¼ teaspoon grated orange peel
a cup fresh orange juice
1 teaspoon cinnamon
3 tablespoons packed dark brown sugar
¼ cup crushed gingersnaps


Peel and core apples, Slice into ¼-inch-thick rings and arrange in a 9 ½ inch glass pie plate. Drizzle orange juice evenly over top. Mix orange peel, cinnamon and sugar in a small bowl; sprinkle over apple slices. Cover loosely with waxed paper. Microwave on High 2 minutes. Rotate dish and microwave 1 to 2 minutes more, until apples are tender. Top with crushed ginger snaps and serve immediately. Serves 4.

Chrüs Chickie / Chitica Polish / Hungarian Fried Cookies

3 ½ c. flour
¼ c. granulated sugar
1 egg
¼ tsp. salt
½ c. no-fat sour cream
¼ tsp. baking powder
¼ tsp. vanilla
½ c. powdered sugar
oil enough to deep- fry cookies 2-3" deep



Mix all ingredients except powdered sugar and oil together well. Knead until it forms a smooth dough. On a floured surface roll dough to ½ inch thickness. Slice into strips about ½" x 2". Make small slit in center of each strip and pull one end of each strip through the slice. Heat oil over medium flame. Drop strips into oil a few at a time. Remove when golden brown to paper towels. Dust with confectioner's sugar and serve still warm if possible. Store covered in refrigerator.

Taffy Apple Pizza

1 - 20-ounce roll refrigerated sugar cookie dough
¼ cup all-purpose flour
2 3-ounce packages cream cheese, softened
a cup peanut butter
¼ cup packed brown sugar
½ teaspoon vanilla
1 medium apple, cored and thinly sliced
Lemon juice (optional)
¼ teaspoon ground cinnamon
¼ cup caramel ice-cream topping
½ cup chopped peanuts



For crust, in a large mixing bowl knead together cookie dough and flour. Place dough in a greased 12" to 13" pizza pan; press from center to edge to form a crust. Bake in a 375E oven about 12 minutes or until golden. Cool in pan on a wire rack.
For topping, in a medium mixing bowl combine cream cheese, peanut butter, brown sugar, and vanilla; beat with an electric mixer on medium speed until combined. Spread onto the cooled crust. Brush apple slices with lemon juice, if desired. Arrange apple slices atop peanut butter mixture.
Sprinkle with ground cinnamon. Drizzle with caramel topping. Sprinkle with peanuts. Cut into wedges to serve. Makes 10 to 12 servings.


Date Balls

1 stick butter
¾ c sugar
8 oz. dates, chopped
2 ½ c Rice Krispies
1 c nuts, chopped



Heat butter, sugar and dates in saucepan until boiling. Lower heat. Stir constantly for 3 minutes. Remove from heat. Stir in cereal and nuts. When cool enough to touch, shape into balls and roll in powdered sugar.

Fruitcake Cookies

2 ½ c flour
1 c butter
1 ½ c sugar
1 tsp. baking soda
1 tsp. cinnamon
1 lb. chopped dried fruit mixture
1 lb. chopped pecans
2 eggs



Blend butter, sugar and eggs. Add all other ingredients except fruit. Mix well. Then add fruit.
Drop by teaspoonfuls on cookie sheet. Form a small ball; do not flatten. Bake 12 - 13 minutes at 350 F until brown on edges. Yield 8 dozen


Monster Cookies

6 eggs
1 lb. brown sugar
2 c. sugar
2 tsp. vanilla
2 tsp. light corn syrup
4 tsp. baking soda
1 c. butter (or Margarine)
1 ½ lb. peanut butter
9 c. oatmeal
8 oz. chopped pecans
8 oz. chocolate chips


Preheat oven to 350 F. Mix ingredients in a very large bowl in the order given. Drop by large scoop or serving spoon on to cookie sheet and flatten. Bake for 8 - 10 minutes. Makes 10 - 12 dozen. These cookies freeze well.

Easy Caramel Pecan Cheesecake

2 - ( 8 oz.) pkg. cream cheese softened
½ c sugar
½ tsp. vanilla
2 eggs
1 graham cracker pie crust
20 caramel squares
2 Tbsp. milk
½ c pecans, chopped


Beat cream cheese, sugar and vanilla. until well blended. Add eggs and beat again. Over low heat, melt caramels with milk, stirring until smooth. Add pecans. Stir and pour mixture into pie crust. Top with cheese mixture. Bake at 350 F for 40 minutes or until center is almost set. Refrigerate at least 3 hours.
Optional Garnish each piece wit pecan halves and/or drizzle with melted caramel.


Apple Nut Dip

1 cup sour cream
1 ( 8 oz.) pkg. cream cheese, softened
¼ tsp. cinnamon
1 small apple, shredded
½ c pecans or walnuts, chopped
2 Tbsp. brown sugar


Beat cream cheese, sour cream and cinnamon. Stir in remaining ingredients. Chill. Serve with apple slices, ginger snaps, pound cake or angel food squares.
