Healthy banana bread

I found this recipe online and made it and they are yummy :)

I did double the recipe so this made about 36 muffins (instead of bread)

Serves 32

Ingredients:

Ingredient amounts have been scaled and may need to be rounded where appropriate
1 cup margarine, melted
1 cup brown sugar
4 eggs, slightly beaten
2/3 cup hot water
2 cups banana, mashed
2 cups wheat germ
2 cups whole wheat flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup walnuts, chopped

Directions:
Grease the bottom and 1/2" up the sides of a 8" x 4" x 2" loaf pan.

In a mixing bowl, using an hand mixer, beat margarine, brown sugar, eggs, hot water, and bananas, scraping the edges. Mix until thoroughly beaten. Stir in wheat germ, whole wheat flour, baking soda, salt, and chopped walnuts. Beat on low until smooth. Pour into a loaf pan and bake in a 350 degree oven for 30-40 minutes. Cool slightly on a wire rack before cutting.
