Tuscan Chicken Breasts

this was delicious and only takes about 10 minutes to prepare and 30 minutes to cook. The kids even ate it!

1 C chopped onion
1 C each chopped sweet yellow and red peppers
1 T olive oil
1 T minced garlic
4 boneless chicken breasts
1 can (14 1/2 oz.) Italian diced tomatoes, drained
2/3 cup chicken broth
1 T balsamic vinegar
3/4 tsp salt
1/4 tsp sugar
1/8 tsp crushed redd pepper flakes
1/8 tsp pepper
Hot cooked pasta
1/4 cup shredded parmesan cheese

In a large skillet, saute onion and peppers in oil for 4-5 minutes or til veggies are tender.
Flatten chicken to 1/2 inche thinkness;place over veggies. Add the tomatoes, broth, vinegar, salt, sugar, pepper flakes, and pepper. Bring to a boil. Reduce heat;simmer uncovered for 20-25 minutes or til chicken juices run clear and sauce is thickened. Serve with pasta. Sprinkle with parmesan cheese. YIELD 4 servings.

Mmmm...that sounds wonderful! I'd love it but DH and all of my dks would end up eating plain pasta for dinner.:(

I guess they could order pizza that night!:)
